Egg substitute for baking

Does anyone have a suggestion for an egg substitute to us for baking bread, cakes, and pastry? My hubby likes to bake and he is trying to adapt recipes for the our new vegan diet. Thanks.

There is something called "Egg Replacer" by Ener-G But you can use flax meal. I use a baking book called "The Joy of Vegan Baking" by Colleen Patrick-Goudreau It has the best recipes for novice or seasoned cooks.

I use the EnerG Egg Replacer. It comes in a box that looks similar to a cake box. It is a little pricey, but once you do the math, it saves you tons over the cost of real eggs. I found mine in the gluten-free section of our local grocer. It works terrific in most the dishes that I use

I use the Ener-G product. It makes a difference if you whip it up with hot water first. However, don't expect it to do exactly what eggs due to cornbread and cake! Colleen is amazing! We ran into each other at last November's Farm Sanctuary Festival of the Turkeys which we try to hit every Thankgsgiving. I use ground flax seeds - 1 tablespoon flaxseeds + 3 tablespoons water, let sit for a couple of minutes, and then use like an egg in baking. It works really well for things like muffins, pancakes, cookies, etc. I've never tried it in sandwich bread. None of the breads I make call for eggs.

mommyof2nc, does that work out to one batch of the mix you described per egg needed? (So 2 T flax + 6 T water = 2 eggs)

Might be best to use recipes that are intended to be vegan until you get the hang of dairy and egg-free baking ... we had some vegan cupcakes at a potluck recently that were absolutely amazing. I think the woman who baked them used Isa Chandra Moskowitz's cupcake cookbook.

I use the Ener-G because it is gluten free as well as vegan. I have heard that you can use flax seed but I already get so much of that in my diet that I have not tried it. I have also heard that you can used mashed bananas or apple sauce. I would run a google search for vegan egg substitutes! BTW, the Ener-G only works to replace up to 2 eggs. I tried to do it with a four egg requirement and it did not work at all.
