DAY 15 What RU Eating?

d-leftover kung pao

l: last of the leftover cabbage potato casserole with spicy brown mustard
d: chili
s: banana, clementine, apple

I'm eating my muesli with almond milk right now and will follow up with my green tea.
l - either veggies or hummus sandwich
d - my soup that I'm still eating with some of my bread
s - apple

B - almond milk, cereal, and blueberries
L - Open Face Veggie Burger with watercress and other veggies, small side salad
D - butternut squash, chickpea and quinoa tagine - small side salad
Snacks: Green Smoothie (carrot juice, kale, apple, blueberries - 1/2 small bannana)

B- Oatmeal with raisins
L- Corn pasta with mushrooms,onions, and artichoke hearts
D- butternut squash risotto or leftover pasta.

I made homemade french onion soup this morning for my mom and neighbors. I want to get rid of it as soon as possible because it is not vegan. I am tired of cooking for the day. So, leftover pasta for me!

Okay, I did it....just now I made Mrs. Esselstyn's recipe for Swiss Chard with Garlic, Lemon, and Brown Rice on page 240 of Prevent and Reverse Heart Disease(I am preventing).
It was unbelievably easy and quick to make. kind of a sweet taste but not too sweet. I used red chard so it turned the rice a pretty pink color.
So I can mark that one down for getting out of my comfort zone and trying something new.
I have added Swiss Chard to the list of another wonderful healthy food I learned from the kickstart! Very Happy

Now that you've ventured into swiss chard, you can separate the colorful stems/vein from the greens, use the greens as you did, and use the stems as you would celery - soup stock, soup, stir 'fry', etc. Adds a colorful crunchiness to things.

Thanks for the great ideas about uses for chard stems. I will have to try them.
