Hello All! I am excited to get going on this challenge ( I am a vegetarian ready to take it to the next step). I have the right foods in the house, planning meals, cooking...I think I can do this! This morning I used mimic creme in my tea (to replace skim milk). It is just ok, not sure if I will use it again, or just have black tea. Question, I used to have honey in my green tea, what do you use to replace honey? Have you used agave nectar? Good luck to all! Nan

Agave nectar is a great sweetener, and is good in green tea.

I have never been a fan of honey (or any sweetner for that matter). But I wanted to suggest coconut creamer. I bought some the other day to replace my coffee mate and I LOVE it.

Oooooooo...the honey question! Good times!!!  I am a vegan for nutritional reasons. When I first began this adventure I made the decision to go 'all the way', you know go big or go home, right?! So I gave up my honey and milk in my black tea and went to Agave and an variety of plant milks for the better part of 7-8 months. A while ago there was a lot of hoopla about Agave and the purity, the conditions under which it is manufactured, whether or not it was just as bad as HFCS...bla, bla, bla. Although I don't really know what came out of that debate I took a look at what it was that I was trying to do by making this change to my life. One of the primary things was to eat as pure as possible. So realizing that I was talking about less than a tbs of honey/cup of tea, I chose to go back to honey. I KNOW!!!!! LOL! So I am a honey and soy milk tea drinker! The thing is that this like all of the other decisions you make on your journey are intensely personal. We can tell you what we did, why and whatever else comes to mind but it's up to you. Good luck with this and all of the other choices you make on you path to good health!

Hi Nan - I've been using agave nectar since I first learned about it here during last January's Kickstart. The kind I purchase is organic blue agave syrup. I have also used pure maple syrup to sweeten my tea. You don't need much of either substance to get the desired sweet effect.

I still do honey, but I get it from a local farmer so don't worry about it too much. Nutritionally speaking, I don't know that there's a really compelling reason to choose agave over honey (both are better than refined sugar), especially if it's a teaspoon in coffee or tea. Oh, and I'll second that coconut creamer comment. Yummy, yummy, yummy.

That coconut creamer???? What is the brand name and does it come unsweetened? I got back on coffee after 20 some years. Now trying to go decaf and plain soy milk in the coffee but there there is the gas. So would like to try the coconut creamer.

I use so little sweetener I've not made a study of any of them. I have honey in my cupboard and when I feel the need for a sweetener it's what I use. I know it's not truly vegan, and I guess that means I'm not 100%. My path is one of progress, not perfection.

I use stevia. I love being able to carry it in my purse. I only buy it in either foil lined or plastic lined packaging because if air gets to it it stops pouring...Elizabeth

I have been using Truvia for about 8 months and like it very much. I have also replaced soy milk with almond milk and prefer that by far. Today I bought the Mimiccreme to bring into work so we'll see whether I like that or not.

According to the Truvia package it is made "with rebiana, the best tasting part of the stevia leaf". By itself it does tend to be very sweet as I've sprinkled it on fruit as well. Beats me if it's any better or worse than stevia by itself.

Hi Maru! My biggest problem is sweets and I have yet to try any dessert recipes that are mentioned. Have you had a chance to try any yet? I think that is going to be by biggest challenge. LOL!

this may seem strange, but while I am excited about the 21 Vegan Kickstart, feeling a bit of a loss for the foods I am giving up. I love cheese (all gone) and wasn't able to throw out the sour cream and greek yogurt. I feel better tonight and moved them to a differant shelf and will throw them - luckily I haven't chosen to eat them. I know they are products that aren't good for me - actually allergic to cow's milk, so know this is the right decision. Just hard.

Six mos. after changing to vegan, and cheese what no longer in my mind, I decided to look for a vegan alternative. Found "Follow Your Heart" in my market. Their "Vegan Gourmet" cheddar is my favorite, and the store also carries their mozzarella. Melts very well, also. Of course the texture is different, but I only buy it occasionally as a treat, as I don't want to become a cheese-aholic again, and I can do without the extra fat!

I've tried So Delicious brand Coconut creamer ("certified vegan" according to their website), and really liked it. I've been using agave nectar as my sweetener of choice since the beginning of the year, and I really like it. I haven't cooked with it a lot, but for my tea, smoothies, etc, I almost always use that. The flavor isn't as strong a honey, so it does not overpower a lighter tea IMHO. Supposed to be lower in the glycemic index, so preferable to white sugar.

The So Delicious is the brand of coconut creamer I used. I can't stand sweetened coffee so I was happy to find an alternative to regular coffee mate! I really should just stop the coffee, but I figure one-two cups of decaf a week is the least of my food problems.
