Just signed up & have question

Just signed up late last night & so haven't got all the stuff in my pantry/fridge for the week 1 recipes & have already spent grocery budget for the week. Are there substitutes for the recipes?

Hey kickstart! (what an adorable handle! Smile)

Keep it simple! Have you whole grains, vegetables, and fruit? Then you have all you need for today - BUT I'm guessing it may be slim pickin's and you definitely want to have lots of good food around - because what you have is what you'll eat, right?

Oatmeal and fruit for breakfast. If you have almond or rice milk, you can splash that on, but not necessary. Sprinkle some cinnamon, even a tsp. of sugar won't hurt!

Rice cooker? Fire it up. For another meal, pile half your plate with rice, the other half with veggies, eat your fill.

Raw veggies around? Slice 'em and munch on 'em! Potatoes? Cook up a pot or an ovenful.

See where I'm going with this?

And can you get to market today?

Ah, yes. So I don't have to follow the day's meals to the letter?

Veggies: lettuce, spinach, carrots & 1 cucumber
Potatoes, yes.
Fresh fruit - right now just cherries & nectarines, but enough for today through Wednesday.
Not many grains, tho I think I have lentils in the pantry. A couple of cans of black beans, I think.
Almond milk, yes.

Need to take inventory and see what I can come up with.

Yes, I am able to get out to the store, but low on funds so will have to wait to purchase any new supplies.

I love that everything is put together already and ready to just follow, but am uncertain about "this for that" substituting out here on my own.

Kickstart, I can see you are going to get the hang of this fast.

And you can really save $$$ with this way of eating if you stick with unpackaged and simple foods. Starchy veggies, whole grains, and high water content veggies will be easier on your pocketbook than processed and packaged. Easier on your body, too.

Good Morning KSNewbie!
On the website there is a tab for "resources" if you scroll down there are links for breakfast, lunch and dinner ideas. Also a lot of the foods used are pretty inexpensive. (Maybe you could get some canned beans and a bag of rice?) Even if you can't, i am sure you can find ways to incorporate what you have in your pantry.

New here too, but I see lentil soup in your future with the lentils, potatoes, carrots and spinach. Hope you have some spices, maybe a bay leaf and some basil or a bit of curry powder? I wish you had an onion... Very Happy

Thanks, everyone! I just dug out my rice cooker & had exactly one cup of rice left in the pantry, so it's cooking now. I did have a bag of lentils, & soup will be on soon!

I appreciate all the support...this is going to be FUN!
