Snacks fo gluten intolerant
Posted Monday, September 6, 2010 at 10:21 AM

I have been using nuts for snacking but they're probably too high in fat. Any thoughts for easy snacks that are portable or quick?
Thanks.

grapes
cut up apples
rice cakes
Larabars
baby carrots
roasted chickpeas (several recipes on-line)
soy nuts
I love raw Brazil nuts, I allow myself 1 ounce a day.

There's probably more, that's all I can think of right now.

Thanks Vikki. Do you put anything (like peanut butter) on your rice cakes? PS I love Dr Fuhman too!

To "wild's" list I would add:

sugar snap peas
cold baked potatoes, sweet potato, yam
brown rice with gobs of salsa
chunk of grainy bread with pico de gallo (on my mind as that's what I grabbed from the grocery bag while running errands in the car yesterday - YUM!)
hummus with veggies
erewhon crispy rice cereal (like dessert!)

Endless list!

I sometimes put peanut butter on rice cakes. Or apple butter. Also fat-free refried beans with some salsa.

Re: Gluten Free Snacks

I love cut up apples & dip in a small amount of almond butter.

They have some good Rice Crackers, which are low fat & GF . Also some Rice Bars I believe they are made by Nature's Path.

Just picked up some Cranberry Maple Nut Granola Bars.....haven't tried them yet. They are gluten free, caisen free, low in sodium, low in sat fat,& cholesteral free. They are made by "Baker On Main"

Just had the BEST Gluten Free bagel.....piled with Mock Tuna on top. Tasted the closest to the real thing. I've tried other brands and none have been this good. Will definitely try some of their other GF products.

udi Gluten Free Foods

http://udisglutenfree.com/products

Mock Tuna
1 can of garbanzo beans, rinsed & drained (mash with fork, leaving lumpy)
Chopped onion
Chopped celery
Small amount of sweet relish
Veganaise to taste

Hope this helps......having gluten issues is not fun!

Udi's aren't vegan (contain eggs), so I would skip those.

I like Mrs Crimble's Apple Rice Cakes for something to grab on the way out of the door. The little bit of apple flavor makes them not seem bland. I do also keep peanut butter in my desk to spread on a larger rice cake if I need something more like a meal.

If I am near a fridge, I keep low-fat hummus on hand and enjoy with carrots or celery. I also enjoy the Mary's Gone Crackers products, especially the Sea Salt Sticks and Twigs.

I also make my trail mixes that are heavy on dried fruit and light on seeds and nuts, so I can just grab a bag.

I do buy Lara Bars and Bumble Bars, but they are also high in fat. It is good to have options if I will be away from food for a long time.

You might be surprised how satisfying that you find just plain vegetables after a while. Celery, carrots, and broccoli are favorites to eat raw. I also microwave potatoes, sweet potatoes, and eggplant then sprinkle with a bit of salt and pepper.

I did see that they have "eggs" in them..... Crying or Very sad

Maybe they will start making some that are "vegan"??? Hope so!
