I'm wondering what are some bread suggestions? I like to make wraps and pb and j sandwiches. and my 17 year old is joining me in this and we are just courious to know what use to replace breads.

Making your own bread is fun and pretty easy, if you decide to do that. Otherwise, here are the guidelines I saw Susan give earlier this week:

If it has around 3 grams of fiber per slice then that's a pretty darn good bread, higher fiber is even better! Check the ingredients and make sure they are vegan (i.e., no milk, no whey, no egg).

Does anyone know if baking inactivates the yeast in bread?

I'm not totally clear on your question but will try my best. (I formerly owned bakeries.) If you're asking if baked, cooled bread has active enzyme, like a yogurt does, the answer is no. Yeast is active at a specific temperature which is what makes the bread rise but is no longer active when cooled. I was always told not to eat bread that was still warm from the oven because of this. Does that help?

You cook the yeast at hundreds of degrees fahrenheit; it dies, but not until it's done its job. Smile
