Can you really eat as much as you want as the book says? Because my appetite has turned ravenous, and I'm eating way more than one serving at a time. I'm really worried that I'm getting too many calories from eating too much food. Embarassed

And why do some of these recipes have oil in them, because I had the impression that using oil was not allowed? Shocked

I think, especially to begin with, eating 'til you're full is alright. I'd just focus on the stuff that will fill you up with fewer calories - fruits & veg - and make sure you're taking your time with eating. I'm the queen of overstuffing when I'm in a hurry.

I believe the overall approach to oil is "limited." In other words, a couple of teaspoons here and there are OK, but you don't want to be dumping it on everything all the time. Smile

Thanks! I'm hoping my over zealous eating settles down, and it seems logical to do that with the oils.

Hi Lauren, when I first read the book, I was shocked too. The key is to eat until you're full, then stop. The difference is that you'll be eating the right foods with a vegan diet. You'll find that you'll be really satisfied.

As for the oil, I only use olive oil, and it's sparingly. I was surprised that you can saute with water, but it works just as well. Sometimes, however, I want things browned, like onions, so I use a bit of oil.

Don't worry about too much about the calories. I know it sounds crazy, but you'll see results.

Thanks Paul. I'm going to explore new and varied recipes. There are only a few things I would like to use olive oil in, and just a drop would work for me. at first reading of the book, I thought there was no way I could undertake such drastic changes. But it's a matter of better health, so it has to be done! Very Happy

I wrote about this on the diabetic vegan forum, but I too didn't think there was any way I would make the changes. I loved meat and dairy too much. But, by making the switch, which wasn't easy, btw, I lost 65 pounds and all my numbers are now in the normal range. I know that can't happen for everyone, but it did for me, just like Dr. Barnard said it would. I've been able to keep the weight off for over a year, and my numbers just keep getting better Very Happy I don't think I've ever get back to eating meat.
