been traveling, no time to cook

I normally buy my groceries on Satruday & cook on Sunday - then I don't have to think about food again all week. I don't do more for dinner than re-heat it, by the time I get home from the gym, I need to get dinner finished right away. So my question is - what's the fastest, easiest thing for dinner? I don't want to buy a bunch of frozen dinners. What do you make for dinner when you have neither time nor energy for cooking?

Steamed veggies and a big salad.
Steamed veggies piled on whole wheat pasta and a big salad.
Rice and beans with salsa or marinara sauce.
Gardein vegan chicken scallopini with veggies and a big salad.
Quinoa pilaf made with whatever veggies I have on had and a big salad.
Soup - made with whatever veggies I have on hand and a big salad.

Do you get the impression I do a lot of big salads ?? Very Happy

I do usually have a couple of frozen dinners for *default* along with individual servings on veg or lentil soup. How about vegan lo fat spaghetti sauce over ww pasta? In a real crunch, PBJ on whole grain bread.

Are you talking about what to fix tonight? What do you have in the cabinet?

I bought 2 boxed ready-made salads to have for lunch. Will have them with some tofu. I'm still unpacking from my trip & I'm just stumped for dinner for this week. So -- steamed vegetables & rice & boca burgers?

That will work, I think. I don't use boca burgers, so don't know the ingredients. Do you have any canned beans you can heat up with salsa and pour over rice?

maybe beans next week - I've got a cannister of balck beans, they can soak on Saturday & I'll cook them Sunday. I have a recipe for burrito filling:

put a little less water than the 2-to-one usually called for in the beans, cook for about 2 hours, then turn the heat up to high (don't worry, you're about to chill it down). Add 2 packages of frozen chopped spinach & 2 cans of diced tomatoes with chiles - and some salsa, if you like really spicy food

it's a good burrito filling, with wheat tortillas & sliced avocadoes

My stand by when there's no time is a can of rinsed black beans mixed with salsa or stewed tomatoes. It's good by itself or over grains or ww pasta (I keep one cup portions in the freezer to save time). I tried the Aztec salad from the nutritionmd.org website and it took awhile to prepare but I've got salad for a couple of days.

My go-to no prep meals are low-fat hummus with veggies and toasted English muffins (brown rice variety since I have celiac) with collards, kale, or some other green.

That sounds good especially with the spinach in it. I would guess it needs to go for another hour or so after you add the spinach and tomatoes?

PS Do you have a crock pot? THey can cook during the day when you're at work.

baked corn tortilla chips
seasoned beans
shredded lettuce
diced tomatoes
chopped green onion
finely diced onion, I like red onions
Salas
Guacamole
Sliced black olives.

Pile on a plate and ole!

Have you heard my red lentil monologue yet? They cook in about ten minutes, add spices, and you have the best stew like bean dish ever.

I don't even bother with the extra veggies - just the beans and spices (the ones that I have!) when in a hurry.

All the recipes sound so good! I'll definitely try both the haystacks & the red lentils (actually will try everything)

Ans yes, cook the beans for at least an hour after adding the spinach - and if it is thawed, squeeze the water out of the spinach before adding, if not cook with the lid off.
