gluten free vegan bread

Hi everyone!

I have been making the transition to vegan for about 3 months now. I have slowly but surely taken meat and dairy out of my diet. The only thing left is the egg in my bread products. I have Celiac Disease and therefore cannot have products like Ezekiel (other than their fabulous english muffins) and I was wondering what everyone does to ensure that their bread does not contain animal products, especially those that are gluten free? Any help would be so great because this is the LAST step for me!

What works for me is ground flax seed - 1T + 3 3T of water or energ egg re-placer.

I know I've had vegan rice bread that I found in the refrigerated section of health food stores. I think it was called Food for Life. It was pretty good!

Hi Agie. My son is sensitive to wheat but doesn't have celiacs. We buy Pamelas GF Bread Mix and I replace the eggs with Ener-g Egg Replacer, it comes in a powder. When I make cookies I usually use flaxseed(use 1T. flaxseed to 3T. of water to equal 1 egg blend it in blender until thick.
I was just told yesterday by a mom that The Pure Pantry GF mixes are wonderful too, she uses that for her daughter.

Thanks, does the Pamela's need to be made with a stand mixer? I do not have a mixer nor a bread machine and I am looking for mixes that I can make my own bread with, without needing to buy the extra machinery (I am planning to do it down the road, but right now I have other things to buy!)

Nope, no stand mixer. I also use Pamela's, Amazon has great bulk pricing. I use the 1 T flaxseed meal to 3T water and for the oil I use coconut. It is great. I mix it, let it raise and then bake. Yummy stuff. I too have Celiac Disease. Let me know if you have any other questions I can help with. I am a 20-year vegetarian and have spent more than 1/2 of it on and off vegan. On for life now though!

Thanks Oceandog! That is so great to know. I love Pamela's, it is my absolute favourite but I thought that I had to use a bread mixer!

I think that the non-bread machine recipe does say use a stand mixer, but if you have a hand held or are patient with just a spoon and your hand (!) you should be fine. Just make sure to MIX WELL if you are using just arm power and a spoon! I think this is also good with oats or sunflower seeds sprinkled on top. The coconut oil adds a fantastic aroma and a nice subtle flavor as well.
