Yes, combining foods does alter the glycemic index of foods. Most of the foods we recommend do not have a high glycemic index: whole grains, whole fruits, vegetables, and legumes. There are a few exceptions such as white baking potatoes and cold cereals. But for the most part, I wouldn't get too hung up on the GI of whole foods.
