Can on of the nutritionists give us some insights with the gylcemic index and how various grains, beans, legumes affect blood sugar levels? Does being overweight or food combinations affect the spike? Thanks!

Yes, combining foods does alter the glycemic index of foods. Most of the foods we recommend do not have a high glycemic index: whole grains, whole fruits, vegetables, and legumes. There are a few exceptions such as white baking potatoes and cold cereals. But for the most part, I wouldn't get too hung up on the GI of whole foods.
