Egg Replacer

Does anyone know of something that can replace eggs in recipes? I live in a very small town, and the stores here don't carry egg replacer. I have a lot of recipes that are vegan except for 1 or 2 eggs. What can I use instead of the eggs? Thanks!

Ener-G. Its a powder that you can purchase in a health food section or you can purchase boxes online...I just purchased my first box and can't wait to try it.

Those are good tips. I really like using flax seeds for most baked goods and for dipping and breading veggies! Eggplant parm is our favorite!

The cookbook How it all Vegan has several suggestions depending on what you are cooking. I don't have the book with me now, but recall one was a mixture of ground flax seeds with water.

Chickpea flour (also called besan) also works for casseroles where you need a little binding, like 1-2 eggs. There's a grocery store brand called Bob's Red Mill, or health food stores will have it. Arrowhead brand too is pretty easy to find--my mom's local Kroger has these in TX. Asian markets sometimes call it besan. It's just dried chickpeas ground into flour.

Flax seed is a good egg replacer. Surf the net for some recipes that use it.
