Flaxseed

Looking for ideas to incorporate flaxseed more. Not so much into the 'green smoothies'. I sprinkled a bit on my salad at lunch (ground last night, stored in fridge in a sealed container). I baked a batch of chocolate chocolate chip pecan cookies last night (Veganomicon recipe) that used ground flaxseed. Yummy but a once in a while treat, not a daily thing. So, what are some of your favorite ways to get flaxseed into your days? --Deb R

I put ground flaxseed on my cereal or hot cereal each morning, I have a bread machine so make all our own bread - I always add flax seed both the whole seed and the ground flaxseed. Also use in baking as an egg substitue.

I thought about adding it to my cold cereal this morning but didn't know how they'd do - would it mess with the texture? I don't like the powdery ends of the cereal - would it be like that, kind of sandy, or does it dissolve? If it dissolves, does it make the texture of the liquid thicker? Baking is a good use and we'll probably be doing that more whenever we make doughs and such. --Deb R

I usually have muesli and the ground flax seed just sort of mixes in. When I have a flake type cereal I just sprinkle it on top and I don't notice a change in flavour, etc. although there are often crumbs in the bottom of the bowl. It would thicken I think if left longer but I usually eat my cereal before this happens.

Thanks chickadee - that's about what I expected would happen. I guess I'll need to just add extra to account for the 'crumbs' left in the bottom that don't get eaten. Think I'll make some blueberry muffins this weekend and add flaxseed into them. --Deb R

I put on oat meal...1 tb spoon every day...along with 1 tb spoon of lecithin, cinnamon powder...and slices of banana/apple, or blueberries...

I generally don't eat oatmeal for breakfast (hubby does though). What do you use the lecithin for? The only times I've seen lecithin powder, it was in those "bulk-you-up" type body builder products. --Deb R

Just make sure that you grind the flaxseed if it's not already ground. You don't get all the nutrients chewing the seeds up.

Yup. When our old coffee grinder died (from abuse - we were grinding all sorts of stuff, mostly not coffee) we bought something that can handle coffee beans but is more designed for seeds and herbs. Works great! Ground up a couple tbls of flaxseeds on Wednesday evening, used what I needed for the recipe I was making, put the rest in a sealed container in the fridge. I'm thinking I'll probably do small amounts a couple times per week (Grind on Sunday, Wednesday, maybe Friday if needed) so that there's always some on hand but never a lot sitting around already ground. --Deb R

We're not coffee drinkers so it's rare to have coffee beans in the grinder (we keep a stash of good ground coffee in the freezer for guests). Hubby had his TIA like 'episode' after a little too much coffee over the course of a weekend. And, I've discovered (both research and experiential) that caffeine can cause random blood sugar spikes in some diabetics. Alas, that'd be me. No more mochas or iced cappucinos. I can handle the bits of caffeine in occasional hot cocoa or dark chocolates but the full on caffeinated beverages are out (just when I was getting to like the taste, too!) --Deb R

I have a Magic Bullet and every couple of days I grind up a few more flax seeds - keep it in the frig and use on my cereal and baking.
