my 2nd kickstart, but gained back weight
Posted Tuesday, September 7, 2010 at 1:32 PM

This is my second kickstart. I am so glad I went Vegan. I have diabetes under control but then. .

I got sloppy with my food and listened to too many others and what they were eating. I want to do this right, so I am following the program very closely this time.

What I need help with is this. I eat oatmeal every morning at 6 am. Then I take kids to school, come home and do 30 minutes on the bike and at 9 am I am crashing.

I have 100 pds to lose. I need to know what to snack on the will keep my sugar up. I have to balance my carb/fruit closely. Veggies at my weight don't cut it. I still crash.

IS IT OKAY TO EAT A SMALL BOWL OF OATMEAL OR IS THIS CALORIE DENSE???
Thanks, kc

I might also ask, how are nuts treated on this program and how much? I really think that the almonds on my oatmeal 3 times a day, and I do mean nuts. Like a couple of tablespoons added to my weight gain. thanks, kc

Our research has shown that people don't need to worry about the amounts they consume of the whole plant, low-fat foods such as grains (including oats), fruits (not juice but whole), vegetables, and legumes. This is true for people with type 2 diabetes as well. So eat as much oatmeal as you want. What you do need to watch is what you are adding to it. You want to choose a low-fat plant milk (less than 3 grams per serving) if you are using something other than water. Add fruit and cinnamon -that's good. But watch the almonds. In fact, if I were trying to lose weight, I would skip the almonds all together for now. But don't skimp on the oats. Eat until you are satisfied. Other snack ideas can be found on our menu plan or even here on the forum.

Also, please read more about this dietary approach to diabetes here: www.pcrm.org/diabetes.

Again, thanks for posting.

J says that I gained weight from the oats. That that is what they feed cows before slaughter to fatten them up. I said, no that's corn.

Anyhow, I have been putting fat free butter spray made from soybeans. So I am no longer doing that either. thanks, kc

You are most definitely right, it is corn not oats that they feed the cows to fatten them up. I am just reading the "Omnivore's dilemma" and just read about that exact thing. I eat a very large bowl of oatmeal (3/4 cup) 6 mornings a week. I add 1/2 cup blueberries, 1/4 banana, 1/2 fresh peach, 2 chopped dates and 1/4 cup of either soy or almond milk. I know it sounds like a lot of food but it holds me well into late morning. I do exercise alot and don't have weight to lose but I am sure that you could eat a bigger breakfast. Good luck.

KC,
Please consider reading "Eat to Live" and "Eat for Health" by Joel Fuhrman. It opened my eyes to where my nutrition was lacking. I managed to combine it with my PCRM diet, and am now eating healthier than ever before. The "no portion size" approach of PCRM was too loose for me – I needed more structure. Plus, all the grains that PCRM suggests were too many for me – I gained weight rather than losing. You may be the same way. Stick to mainly fresh vegetables, and keep the grains to a minimum. For your breakfast, try having a small portion of oatmeal (1/2 cup) with some protein (like silken tofu mixed in). You could have some fruit if you find yourself crashing later. Again, I encourage you to read Fuhrman's books, as well as Dr. Barnard's Diabetes book. Feel free to message me if you'd like more info.

I'm on the opposite end of the blood sugar spectrum but I also have crashing concerns after a workout. I like bananas (I think there's fiber in with those carbs) or sometimes I have a vega shake. It's a bit pricey and somewhat caloric, but I use less than half the serving size mixed together with almond milk. It's pretty quick to prepare and it holds me pretty well.

Thanks all,

Molly, you, again, are right on about portion amounts. I do think the grains totally inhibit my loss. I remember when I got hungry on WW that I would eat veggie soup. I liked it, it felt good in the winter, and it was filling.

Thanks so much for the ideas. Lord, I really need to hear to control my portions. thanks, again,
kc

No problem! You know, after I wrote that, I forgot that sometimes Fuhrman recommends the "eat all you want" approach, too! It's just no good for people like us. We need measured portions, or we go overboard. So, I eat within their guidelines, but using measured portions so that I don't go crazy. Smile

Hey Molly,

I just got back from the kitchen. I threw a bunch of veggies in a pot, cooked them aldente, and while they cooked, I did 25 minutes on the bike. I measured out a cup of black beans from a can cause that's all I had, poured the hot soup over the beans and ate.

Next I prayed that God would help me be satisfied.

My sugars felt a little low, so I ate two tablespoons of cooked oatmeal left over from breakfast.

I appreciate the encouragement. Now I got to get back to my writing. I'll try and get on tonight. be blessed, you've sure blessed me, kc

Hi KC,

I have tried the "all you can eat of healthy foods" Fuhrman plan and, like mentioned by Molly, it was the portion sizes that were my downfall. I learned that this was (one of) my problem(s) when I joined Weight Watchers. Currently, I have been at lifetime at my goal weight for 11 months and loving it still.

Weight Watchers did a LOT for me, but here are my two main food related epiphanies that made a big difference in my weight loss:

1) I tracked my hunger and discovered that I got hungry about every 2 hours! So now, I eat every few hours or so, thus avoiding becoming ravenous...which for me led to overeating quickly (never a good combo!)

2) I discovered my portions were huge. Yep, I thought nothing of having a cup or two of rice at one sitting along with a cup of beans, a cup of salsa, a cup of corn, etc. Now I measure beforehand and I am so satisfied with my smaller portion (I also eat a lot slower than I used to and actually savor it.)

Anyhow, these two things made a big difference. If I had to add a third thing, it would be positive self-talk, related to the quote "There is no such thing as failure, only feedback" in that I can learn from my mistakes, i.e., my mistakes are actually part and parcel of the bigger picture of success. So no matter how many times I feel like I have messed up, I just remind my self that I can have a lapse, which can lead to a relapse but it doesn't have to be an entire collapse!!

Best of luck to you!

Sounds delicious, KCWriter! Smile

One thing I've learned through all of this is that we do need some grains/starches, for the sake of our blood sugar and energy, and overall health, but it's our responsibility and choice to determine what we do with those grains. Do I choose a healthy brown rice cake or low-fat vegan crispbread, or do I choose to pile on the pasta, bread, and pastries? Even whole-wheat pasta is a dangerous choice for me!

For myself, there are a lot of grains and starches that I just can't/won't eat, because they're too tempting for me. I have my mental list of "safe foods" that I know won't make me go overboard (and that are healthy), and I pretty much stick to them. Sure, I make exceptions for times when I'm out to dinner for a special event or something, but I make sure to get right back on track at the next meal.

It sounds like you are making great strides in taking care of yourself. Be proud of that! Any big change, be it in diet or anywhere else in life, requires a lot of mistakes, false starts, and moments of "I screwed that up again!" But the important thing is that you're still here and you're still trying. THAT is something to be admired. I am continually impressed and in awe of the dedication I see in you and in the other members of our community here. We make a pretty good team. Very Happy

Thank you! I needed to hear that I must strive on.

I got on the scale this morning and after giving up bread yesterday, I was down 3 pds. I lost the bloat on my body, I woke up at 6am full of energy and a clear mind.

Like I already posted, there is something with me and whole grain bread. I don't feel good when I eat it, I get high sugars, blah, blah, blah.

So Hornblower said to go back to what worked. And that is what I based my meal on today.

Oatmeal and fruit
vegan pattie, smashed cauliflower, veggie soup
apple
vegan pattie, beans, veggie soup
