Breakfast
Organic decaf green tea
Ezekiel 4:19 english muffin

It'll be a while before I actually eat, but here's the plan for day 2 anyway. Smile

Breakfast: hot cereal and a pear
Lunch: Big salad with kidney beans and sesame dressing
Dinner: Farmer's pie (my vegan version of shepherd's pie -- veggies and gravy (maybe seitan if I get around to making some) covered with mashed potatoes and baked)
Snacks: Popcorn, fruit, raw veggies, toast

Instead of hot cereal, I had "fried" potatoes (in water, not oil; with a little seasoned salt) and ketchup.

It is bugging me that the edit option doesn't work.
I spell words incorrectly often. How embarrassing.

Your potatoes sound great. I am going to try those.

Does anyone know of a good vegan veggie dip?

Today I am having some more of the Cinnamon raisin oatmeal. That was really good and hearty.


I spent a good part of the day cooking ahead yesterday. I figured what a great time savor it will be for the next couple of meals. That was until I finished my chili mac and fell asleep and left it out all night. lol

I usually do hummus or baba ganouj for dipping veggies (both really good and easy, I can tell you how). I'm going to try a new vegan ranch dip today or tomorrow, though, and I'll let you know how that goes.

Thanks! I am checking them out. Hummus is such an interesting thing. I absolutely love it most of the time, but sometimes depending on how it's made it doesn't even taste right.

For me, store-bought is almost always inedible; that's why I started making my own. Store-bought almost always has cumin, which I dislike, and some kind of sour-preservative-yuck taste that I don't like. It's also why I can't stand store-bought dips. Bleah.

About the only store bought one I can stand is the Whole Foods one that they make. Even then sometimes it varies and tastes rank, lol.

I love Sabra brand hummus- especially the roasted pine nut variety. Today, though, I'm making my own for the first time. Hoping for lower fat and lower cost (Sabra isn't cheap!) Plus nothing added to "maintain freshness" and the satisfaction that I made it myself! Very Happy

I made the hummus on Rip Esselstyn's celebrity tip page yesterday. I put in fresh spinach and fresh parsley and used tomato juice instead of water. It's different than the usual hummus, but really good!

I LOVE tahini--perhaps too much. Sabra is delicious--but definitely not low-fat if you eat it in the quantities that make me happy. Smile
