My Vegan Lunch

I thought I would start some threads that are VERY specific to meals...so that everyone could post what they are eating for this meal on this kickstart.

I hope that all the old-timers and great cooks out there will also post ideas and meals that they've prepared in the past...to give all of us newbies inspiration!

Here are my thoughts...

My favorite vegan lunch is leftover vegan soup! Though there is just the two of us, whenever I make soup for dinner, I make a HUGE batch, just so I can have leftovers for lunch.

During winter, I make one or two soups a week. Yesterday, I made one of my favorite pea soups....and., yes, it is totally vegan! Here's the basic recipe: sweat a couple of chopped onions (chopping doesn't have to be fussy...this soup is blended), add chopped potatoes, whole garlic cloves, and chopped romaine and simmer in water until potatoes are cooked completely soft. Add frozen peas and cook until the peas are just heated through. Blend until smooth in a blender or with an immersion blender.

It might seem odd to add lettuce to a soup, but it adds tremendous body to the soup, makes it more vibrantly beautiful green...and adds a ton of nutrition!

I make a big batch, with leftovers in mind, so my quantities last night were: 3 onions, 5 cloves of garlic, 1 1/2 lbs. potatoes, 1 head of romaine, 1 16-oz. bag of peas and 4 quarts-ish of water in an 8-quart soup pot.

We both adore this soup, even my omnivore husband.

It's frigid cold up here, so I am getting into the soup season as well. I had a Napolitano Lentil Soup for Lunch, with a Carrot/Red Cabbage salad, and whole wheat toast with some vegan butter.

Other favorite lunches include: bean burritos, some of the Kashi entrees (black beans and rice is pretty good), chik'n sammies (favorite bread/wrap/naan with some fake chik'n, lettuce, tomato). I'm going to be making a Mediterranean potato salad (has chick peas, green beans, and red skins tossed in a mustard sauce with mint and parsley). Oh and duh, I often have a three bean salad with my soups too (basically kidney, black, and cannelini beans with onion, parsley and EVOO/vinegar).

When on the go, I sometimes take frozen meals . . . or, I add some fake chicken to salads too.

One of my favorite soups, which I am making tomorrow, is a pumpkin soup. I top it with pumpkin seeds, and again, have some whole wheat bread with it. Oooh . . . so good. I'll wash all that down with some apple and peanut butter . . .

I have a fast metabolism . . . Weigh around 100 lbs, so without working out, I consume about 1,700 calories a day or more. So, I try to make sure I get at least 10 grams of protein each time I eat.

i need ideas for speedy packed lunches in particular for when i get back to work.

i used to buy a sandwich/get soe take out junk for lunch. i dont want to do that, and for now am staying away from bread where i can. if its in the house i snack on it too much.

i have thought i could do homemade soup, heated and put in a thermos flask. i think if i made soup on sunday night it should keep long enough to be eaten monday and tuesday for lunch.

my second idea is salad. for me salad means lettuce, spinach, maybe some chopped peppers, mushrooms. i need something else in here - some kind of beans/dressing i think. ideas please! (preferably basic ones)

Hi! See my post above . . . but also to add on to that. With your salad, try tossing some beans on there- chick peas for a great greek salad, black beans and avocados for mexican/latin flavors, etc. Also, if you do a berry salad, toss in some sunflower seed or pumpkin seed. They add protein, are rich in Omega 3's.

For the bean salad, it's super fast. Buy one can each of three different kind of beans. I tend to do one can cannelini, one can red/kidney, one can black. Rinse. Toss in a handful or so of chopped parsley or your favorite herb. Toss another handful of onion, if you want. Then add a vinaigrette- you can probably even buy pre-made if you want.

Amy's products makes great vegan burritos.

Are you trying to lose weight or go gluten free for the bread? Other substitutes could be pita bread, or Brownberry makes these mini bread round things, low cal and low fat.

For the kickstart, I'm just going to have a salad every day. Sometimes, I throw a can of beans on top, or some homemade croutons, but this way I just don't have to think about it.

hey thanks! i'm trying to lose weight... and having bread in the house makes me sabotage that as i am a bit of a sandwich freak... in the past just not buying bread has helped resolve that issue. i like beans so buying 3 types of canned beans for variety sounds good. if i rinse and put in an airlock tub in water or something will they keep for another day of lunch?

I love salads and usually have them for lunch and dinner along w/other entree and veggies..these are great for those who work, are fast and portable. For lunch today: Combined butter lettuce,romaine and handful of spinach leaves; added chopped red peper, cucumber, mushrooms and sliced red onion.Tossed with my own scratch vinegrette using basil(dried),crushed fresh garlic, sea salt, and freshly ground pepper to olive oil and balsamic vinegar and 1/2 can of soy black beans for protein. Other idea is to add sunflower seed and/or pecans..be careful though, use sparingly..I always measure..great addition of MUFA for the meal.
Supper MealPlan: WW pasta w/roasted grape tomatoes,steamed broccoli/caulifower along with small tossed saladw/same dressing 1:2 ratio. Will pass on more ideas as I try out recipes..thanks for all your comments.. Gramma Smile

Today I am having some of the left over Cous Cous salad and Red Pepper Carrot soup. I am putting some green onions and cooked cauliflower into the soup as well. Haha trying to make sure my good veggies don't go bad in the fridge.

Whatever I have around. Yesterday, it was mushrooms, cucumbers, and mandarin orange slices on mixed greens, with a sesame-ginger dressing. Today, I'm going to use romaine, and put tomatoes, grated carrots, a few sugared walnuts, and a red wine vinaigrette on it. And maybe other stuff if I run across something that looks good when I go in the fridge. Smile

Today, I also had a salad while I was out, and it was outstanding: Roasted golden beets, shaved fennel, watercress, toasted cashews, and a cranberry vinaigrette.

Today, I had a Morningstar Farms vegan burger on a whole grain bun with salsa. All I needed to do is add a salad, and I had a pretty good lunch.

On other days, if I'm really rushed, I'll microwave an Amy's frozen sandwich pocket or rice bowl OR simply microwave a white potato (I know they are high-glycemic, but they are vegan...), add some salsa, and a side-vegetable.

Today's salad ended up having:

Red romaine lettuce
Tomatoes
Mushrooms
Grated carrot
Cucumber
Thinly sliced red onion
Kidney beans (canned, drained)
Corn (frozen, rinsed to thaw)
Red wine vinaigrette

Yes, they will definitely stay. For the bean salad, I usually I make it Sunday night, put it in a container, then it lasts until wednesday lunch . . . probably longer but I have a short attention span and start getting sick of things. I just keep it in the refrigerator. You will have tons of leftovers. I usually pack my hubbie some for dinner.

For the beans where you just toss on the salad . . . I just put in a ziplock bag and it lasts two to three days. I don't add water to them . . . but you could probably do that.

Black bean soup. Salad with red leaf lettuce, croutons I made this morning, green olives, and avocado/miso type dressing. Delicious!
