My Vegan Snacks

I thought I would start some threads that are VERY specific to meals...so that everyone could post what they are eating for this meal on this kickstart.

I hope that all the old-timers and great cooks out there will also post ideas and meals that they've prepared in the past...to give all of us newbies inspiration!

I'll start!

My favorite vegan daily snacks are simple...just a handful of nuts or a piece of fruit.

For new years' eve, we had a vegan snack bar for our celebration! Some was just stuff I purchased; my local supermarket has a great olive bar (more than just olives); I put out marinated artichoke hearts, muffaletta spread, marinated broad beans, and a choice of fancy olives. No one noticed it was all vegan!

I also made a simple vegan appetizer: toasted whole walnuts stuffed into pitted dates. Very popular.

I usually just have some nuts or fruit for snacks, though I'm also a big fan of olives, so sometimes I eat 3-4 of those instead. Or, if I have hummus around, I'll eat that with crackers or veggies. Smile

Popcorn
Fresh fruit
Cut-up veggies dipped in something creamy (I'm going to try this ranch dip next: http://vegandad.blogspot.com/2007/09/ranch-dip.html
Sandwiches with tofu mayo and whatever veggies I have handy (last night, it was cucumbers)
And more popcorn. I love popcorn!

Oh, I totally forgot...popcorn is one of my favorite snacks as well!

But my problem is...I love it with butter.

Any topping suggestions that would make my favorite snack vegan?

Couldn't you use Earth Balance or another Vegan 'Butter' Spread? I also read somewhere a recipe for popcorn using sea salt and rosemary. . .

Some people top their popcorn with nutritional yeast for a cheesy taste. Red Star makes a good n. yeast.

I like almost anything on my popcorn, but I'm going to tell you a trick for eating popcorn without butter, and you have to promise not to tell any of the fat-free vegans this trick, because it's SO not fat-free:

Cook your popcorn on the stove, but use too much oil. I know it sounds silly, but that oil ends up coating every kernel, and the salt sticks to the corn and everything. I don't do this all the time, but when I'm really really really in the mood for buttered popcorn, it hits the spot.

Mostly, I'm fine with just salt, or seasoned salt, or whatever. I also love popcorn with curry powder, onion powder, garlic, or almost any savory seasoning. One thing that's yummy is to sautee garlic in either Earth Balance or olive oil and pour that over the popcorn. Once again, this is NOT low-fat, but it's certainly vegan, and if it's an occasional treat, I don't see why not.

Also, my family LOVES kettle corn, and here's how you do it:

Make corn in a pot on the stove (if you need to know how to do that, I can tell you) and just as the first kernel pops, toss in 2-4 tablespoons of sugar and keep shaking your pot. When it's all popped, pour the kettle corn out and salt it lightly. OH, my, is this good.

Thanks to everyone for their suggestions about what I do with popcorn!

During my vegan flirt phase in December, I did try Earth Balance with butter (50/50) in my popcorn to see if I liked it. Compared to other vegan "butters" I've tried, Earth Balance is very good...but unfortunately for me, butter is just one those flavors that I crave. So something butter-like...hmmm....how do I put this...just makes me want more of the "real" thing. So for this kickstart, I am trying to stay away from vegan margarines. Trying to get my tastebuds to like new things...hopefully as much as I liked the old things.

I have never tried nutritional yeast, but should give that a try. I've seen it in a lot of vegan recipes, but have never had it.

Serene, I like your ideas (and your sense of humor)! Thanks so much! I will try over oiling, and see if that helps. I like the idea of sauteing some garlic in olive oil and using that. Never made homemade kettle corn, but it sounds easy. Your seasoning ideas....well, let's just say I have lots of ideas now!

Definitely love fresh fruit. I have to be careful because I could easily eat four or five a day.

When I'm hungry and haven't prepared anything, a handful of almonds calms the tummy and gives me time to choose something healthy.

Favorite comfort food snack - Stacy's Whole Grain pita chips and hummus. (I don't really like beans very much so I feel like this helps me get some beans in me Cool )

If I'm out and about and the hungries attack - I try to have a K.I.N.D. fruit & nut bar from Whole Foods in my purse. I use to eat one a day, but eventually I've found these to be too sweet, but they are a reasonably healthy choice in a pinch. Just be sure to read the labels for the dairy free options.

I find that when I'm home and need a little something a nice bowl of miso soup does the trick. Warm foods make me happy.

Sometimes I keep a little container of leftover garbanzo beans to which I've added whatever spices I'm in the mood for (usually chili powder and/or cumin, salt and pepper, etc.), then put on a cookie sheet and toast for about 15 minutes. I really just want to dry them out so I can eat them by hand when I'm on the run over the next couple of days.

Just wanted to say a big THANKS to serene. Last night I had my first vegan popcorn...and I LOVED it.

This is huge for me...really! I am a total popcorn freak, and my buttery popcorn was always on my short list of..."I could go vegan if only it wasn't for..."

BTW, I had always used WAY too much butter as well, and could never cut back (and I did try various times over the years but could never keep the level cut down permanently). Over buttered popcorn was my one HUGE thing that I had to have even though I knew it was terrible for me.

I used your suggestion of over-oiling (still using WAY less oil than the old butter style I ate before) and using different seasonings. I used what I use for ranch dressing seasonings...and added pure garlic spray (something we sell at my specialty food store that I always have in the fridge). Oh, man! I couldn't get over how incredibly good it was!

I could eat this, well...forever!
