My Vegan Dinner

I thought I would start some threads that are VERY specific to meals...so that everyone could post what they are eating for this meal on this kickstart. I hope that all the old-timers and great cooks out there will also post ideas and meals that they've prepared in the past...to give all of us newbies inspiration! This meal is the trickiest for me. While I've been vegetarian for nearly 5 years, my DH is an omnivore. He is actually very supportive of my choices, and knows that I will not be cooking meat in the home. But he doesn't like many vegetables besides carrots, peas, and corn. He is willing to try one new veggie/fruit/grain a week. One trick that does work is my blended soups. I can put just about any vegetable in a soup that will be pureed...and he will eat it. My basic vegan veggie soup goes like this: saute aromatics (like onions or leeks...and always garlic), add various chopped vegetables (carrots, zucchini, cabbage...anything in season and cheap!), add a chopped green (I've gotten away with kale and dandelion greens!)...and always some medium starch potatoes (like Yukon Gold or thin-skinned white) to give a creamy and light texture without dairy. Cook in water or a mixture of veggie broth and water until everything is tender and then puree. I also like salads for dinner, but more in the warmer weather. I need to work on incorporating more raw veggies in the winter...but I do prefer to cook them when it is cold. One thing I am going to try to implement is a small vegan relish trey before dinner (really a part of dinner, but he'll like it more if he thinks we're having an appetizer)...just some raw veggies and a bean-y type dip. Fresh raw veggies don't always have to be salad, after all!

I had the Hoppin’ John Salad and Kwick Kale. Yummy ! Never had black-eyed peas or kale before. I am really enjoying making the recipes on the meal plan. I used to eat way too much processed veggie foods, pizza, Taco Bell, etc. I'm getting into this cooking thing

I am SO lucky, in that my family will pretty much eat anything I put in front of them. They would prefer to eat meat at most meals, but they don't really care. They all LOVE chickpea gravy, and most everything else I make is fine with them, but I did notice that when I was putting together my dinner menus for the kickstart, I gravitated toward stuff I know they like better. (We don't allow food drama around here, so I never force anyone to eat anything; if they don't like what I've served, they're free to go rummage in the fridge for something they might like better. Mostly, though, they're lazy and would rather be cooked for than forage for their own meals.

Wow JamieR - your blended soup sounds so good! I am definitely going to have to try that. As for me, tonight's dinner was leftover sauerkraut/whole grain noodle kuegel! I know you are asking yourself - how could there have been any leftover???? Evidently not everyone is a huge fan of sauerkraut.... but it was New Years!

Tonight I made Black bean burritos according to the 'Speedy black bean burritos' recipe. I also added avocado and wrapped them in Ezekiel sprouted tortillas. I also made some bean dip and tortilla chips and had a few as a side.

Im going to make spaghetti then have tomato sauce and nutritional yeast on it. Yum. Then some raw vegetable. Probably going to eat cucumbers with it.

Last night's vegan dinner was farmer's pie. Tonight, I'm planning to make spaghetti marinara and roasted veggies (beets, onions, butternut squash, carrots, potatoes).

I made the Easy Bean Dip with Oven-Baked Tortilla Chips. Had it with shredded lettuce and diced tomatoes.

My vegan dinner tonight...is my normal winter vegan breakfast of kamut + fruits + nuts! Busy day today getting ready to go on a trip, so I've been mostly snacking today (fruits, veggies, and nuts). We'll clear out the fridge tonight...and I'm slated for a salad and hot cereal! Off beat...but sounds good to me!

We're having Ethiopian food. I bought injera from our local shop, and I'm making two curries and a green salad to serve family-style on the injera. One curry is green split peas with berbere (ethiopian spice -- I got it from the fatfreevegan blog) and the other is garbanzos, carrots, and green beans with ginger, garlic, and turmeric.

Tonight was pasta with a dab of Earth Balance, Vegan parm and mushrooms along with a great salad. Yesterday since the meaties ate ham I made some Gardein beef cubes along with all the sides I made for them: corn, green beans and brown rice. I did have to get a few MOJO bars to get through the part of my day that gets too busy to stop for food but that is the only processed foods I have included. I do like the Clifbar products although thier luna bars do have dairy and for that reason they no longer say they are vegan safe. However, I am very dairy sensitive and have never had a problem with the dairy free stuff.

Today my dinner was the best!!!! I made Mac and Not Cheese Bake and Spicy Chickpea and Tomato Soup....YUMMY! I also made Miso Salad Dressing for tomorrows salad. For lunch I hade left over African Vegi & Bean Soup with homemade a granola bar w/an apple as an afternoon snack. I think I can really do this!!!!! 
Your stomach shouldn't be a waist basket.

My vegan meals today: B-multigrain cereal with soymilk & an orange S-another orange L-pinto beans with garlic, onions, tomato, & romaine lettuce D-lima bean soup, one piece of wholewheat toast with a little bit of raspberry jam Was really craving something sweet this afternoon and evening for some reason and almost went off. This usually isn't a problem for me, usually I'm trying to dodge the potato chips! Anyway the toast with jam worked.
