Day 17 What R U eating?

HI,
Inspired by the soup today.... i am making a lentil and mushroom soup. 2 pkgs of baby bella mushroooms, 1/2 pkg dry lentils, 1 pkg veg broth, 1 diced onion, 3-4 cloves of garlic. Love the way baby bella mushrooms firm up when boiled.

b- cereal
l-soup & bread
d-soup, veggies w/diced tomatoes over either quionoa or couscous.
dessert... strawberry shortcake.. bisquick is vegan.. yum.

so what are you eating?

l: probably leftover chili
d: SOUP!! It's our turn to make the food for the fellowship meal at church tonight. Hubby is making root veggie soup (homemade veg stock with potato, sweet potato, golden beets, turnip, parsnip, onion, and black beans, maybe butternut squash added as well even though it's not a root veg) plus we're picking up a couple of fresh loaves of bread from Great Harvest Bread Co. - they have a high fiber multi grain that is yummy, plus we'll probably get a basic honey wheat.

B- Smoothie- I like freezing my fruits when they get very ripe and sweet. I've only done it with strawberries and bananas though
L- kale salad with a sweet mustard dressing and brown rice sushi
D- chickpea nuggets with caulipots with chickpea gravy
S- dried mango, and roasted seaweed snack, and coconut water with pulp
I have to make stock today, my stock bag is full.
So soup will come soon.

Brittie-Regarding your smoothie-throw in some kale or spinach or cabbage. They don't change the taste and you can make it a green breakfast along with the fruits in it.

I used to do that ie: making green smoothies but I need a better blender. I just juice my greens and blend my fruits. Maybe I'll start freezing the pulp and start having green smoothies again.

Hubby's got the veggie stock going and it's starting to smell yummy in here!!
