Thoughts on coconut milk

I found a couple of recipes that use coconut milk. I have never had coconut milk but I've heard it's pretty high in fat. The recipes are for a chickpea burger and a lentil stew. Is the coconut milk ok since it's plant based or should I use something else?

Yes, you can definitely use something else! By proportion (adjust higher or lower by your recipe):
1 cup coconut milk =
1 cup soymilk + 1/2 tsp coconut extract
or
1 cup almond milk + 1/2 tsp coconut extract

I like almond because it is the lowest in calories and fat of all the plant milks, and it has a great, mild taste. I buy the Pacific Organic Unsweetened Vanilla or Original, but Almond Breeze also makes an Unsweetened version. (I get unsweetened because the regular version is loaded with sugar.)

I just checked my vanilla almond milk. No wonder it's so good! It has 15 g of sugar per serving. I'd better look for the unsweetened version next time.

I've got to get better at reading labels. I can't just assume something is good for me because it's vegan.

That is a really easy trap to fall into! I find myself in it quite frequently, still, especially when looking through cookbooks, etc.

I have "lite" coconut milk in my pantry, although I haven't tried it yet. I have some recipes I want to make that call for it.

If you are using the cans of coconut milk, you could also just try watering it down a bit. I find that it still give a nice creamy texture and delicious flavor, but because it is so rich you can dilute it somewhat without any great loss (at least in some uses). Just something to play with. I also really like the So Delicious Coconut Milk that is more like a soy milk, sold in cartons in the dairy section. I think the calories are more similar to soy milk and it is creamier than the rice or nut milks, and quite tasty. I like to add that to the rotation so I'm not always using just one kind, especially soy since I eat so much other soy.
