Yes, you can definitely use something else! By proportion (adjust higher or lower by your recipe): 1 cup coconut milk = 1 cup soymilk + 1/2 tsp coconut extract or 1 cup almond milk + 1/2 tsp coconut extract I like almond because it is the lowest in calories and fat of all the plant milks, and it has a great, mild taste. I buy the Pacific Organic Unsweetened Vanilla or Original, but Almond Breeze also makes an Unsweetened version. (I get unsweetened because the regular version is loaded with sugar.)
