Bicycling, vegan diet, arthritis

I started a vegan diet in March 2010, and stuck with it. I'm an avid bicyclist. I like to do really big rides like the STP (Seattle,WA to Portland, OR, 204 miles) Before I would have to take vitamin "I" (ibuprofen) before, during and after, any big ride, because of the arthritis in both of my knees. Let me tell you, I think I might have taken one ibuprofen this entire summer. I can't get over how GREAT I feel! Even my husband was shocked at how much faster I am, because I don't struggle on the hills anymore. I'm in my 50's, and I only regret that I didn't do this sooner. Thank you everyone that is involved with PCRM! You really are life changers!

for breakfast I'll make a shake, with fruit, vegan protein powder, almond milk, & believe it or , (shout out to Kris Carr) KALE! lunch might be a great big salad, with as many veggies I can pack in there along with some white beans for protein or a sandwich with hummus & veggies. Dinner varies, I might make a stir fry with tofu, or black bean tacos or spaghetti with red sauce. For snacks I'll eat fruit, almonds, or if I'm really hungry a half of a larabar. All my friends wanted to know how I quit cheese, which I used to love. I said it's like quitting smoking, you just have to go cold turkey. I'm not as fat free as the 21-vegan kickstart diet. I eat avocados, nuts, peanut butter and extra vigin olive oil and olives

you may laugh.. but i have never had kale. I am not even sure i would know what it is in the supermarket. do you cook it before putting it in the shake? what does it taste like? I have seen it in soup recipes... what brands are vegan protein powders?

I also have terrible joints in my knees post a few surgeries. I have a trailer for a bike to take my dogs, now I just need the bike! hahah talk about the cart before the horse! I plan on looking into getting one next year. I do hope that I will be able to drop some weight prior to that. I am a guten-free vegan so I think my trouble lays in fats.

It can be curly & green or very deep greenish black which goes by the name dinosaur kale, or if you're really lucky, you can find Russian Kale which is purplish and flat leaved.I chop up the leaves, raw (not the tough spine) and throw about a 1/4-1/3 cup in my blender with everything else. I'm using True Protein gemma pea protein powder, because you can order the way you like it, with or without flavors or sweeteners. I prefer unsweentened, plain. I order it online. Any good health store or natural market should be able to help you find vegan protein powder. Just read the labels, because some brands have too much sodium.
