I make my vegan sausage, and it rocks. Look at the video first to see the method, and then change the seasonings to the ones I've listed, and you won't be sorry! You can make patties or link-style. It is so good! Video: http://www.everydaydish.tv/index.php?page=recipe&recipe=109 Spices for breakfast sausage: 1 tsp dried sage 1 tsp kosher salt 1/2 tsp fresh ground black pepper 1/8 tsp dried marjoram 1/2 tsp paprika a pinch of ground nutmeg or allspice Or here's another recipe for breakfast sausages: http://vegandad.blogspot.com/2008/03/breakfast-sausages.html

Oh, I forgot. Also a half tablespoon of brown or raw sugar for the seasonings on the breakfast sausage.

[url]http://www.lightlife.com/product_detail.jsp?p=gimmeleansausage I like Lightlife, Gimme Lean Sausage. It's vegan and fat free. My omnivore husband even likes it.

I know you said you tried the Morning Star brand but did you try the patties? If you cook them in the oven, they're really good. They have more of a meaty-type texture to them. I make them for my family and even my husband and son (who normally wouldn't eat "fake" meat) like them. Just cook them until they're kind of crunchy on the outside. We don't like the links at all, though - and the patties aren't good if you just microwave them (too mushy).

I use to consider sausage a special food group! I eat Gimme Lean and some of the tofu brands of sausage for eating in a bun. Gimme Lean is also good in spaghetti sauce, veggie hash, etc. Like other meat substitutes, don't cook it too long. It's nice to be vegan! Jean

I also on occasion use the Morningstar, but the patties only. And as long as you don't over-nuke, I don't mind them in the microwave, but the links are not good at all. Surprising how there can be so much difference in a brands products. As a treat, I take a healthy, whole grain english muffin, toasted, spread a little vegan cream cheese on each side, then a sausage pattie, cut in half, so it kinda fits, and make a great breakfast sandwich. Its also quick, and portable, which is good if I need something to take with me in the car.

Morningstar Farms breakfast patties are NOT vegan. They contain milk and eggs.

Morning Star makes one vegan recipe available at Meijers. The rest contain milk and eggs. I guess it works for them! I'm from Port Sheldon Twp., Michigan (west coast). Jean

Yes, unfortunately that is true, and brings up a very good point about reading labels, and deciding what is appropriate for you. While I understand that this is a vegan plan, and would never try to undermine or diminish that for anyone seeking to go strictly vegan, my own personal plan has been to just move in the right direction, trying to avoid all animal, but not stressing, at this time, if something I eat has a minute amt. of egg or dairy in it.(The China Study, my influence) For example, I bought some Paul Newman organic, low-fat fig newtons which I loved, but saw later that there is dried milk product in them. So I will continue searching. But back to the sausage... for me (since again, I am not truly strictly vegan), it is not so much about the minute amt. of egg white in the product, as about the fact that it is a very processed, soy product with a whole list of ingredients that we don't need, thus my choice of "occasional treat". This kind of goes to the heart of the discussions now... of vegan, vs. healthy vegan vs. whole-food,plant-based, vs......well, you get the picture. We will all have our lines-in-the-sand. I just try to keep moving in the right direction.

Julia, I suspect you may be experiencing some sort of detox from changing your diet. It may take a few days or longer to get the toxins out of your system. During this time your symptoms may get worse instead of better. Also check the ingredients to make sure you're not having an allergic reaction. Just be patient.

I'll second or third the recommendation for Gimme Lean, sausage style. My husband and I have been eating that for 10 years or so, before either of us went vegan. You can slice it from the tube just like Jimmy Dean (thus, the cute name), or crumble it for recipes, etc. Tip: nonstick pan and slightly damp hands helps, as it can be sticky before it browns. My omnivore friends always like it too, when they are visiting. Another brand of vegan sausage is Field Roast. These are bigger links, not necessarily for breakfast. But they are so good--really the best veggie sausages I have ever tried. We use them for breakfast sometimes, chopping them up for tofu scrambles or breakfast tacos. But they're great on the side, or even as a veggie dog. Whole Foods and other health food stores carry them, and I've even seen them at larger supermarkets. http://www.fieldroast.com/products.htm (And see "Where to Buy" so you can search by area.) Not every day, mind you, especially if you are watching or trying to lose weight. But if you just gotta have sausage, or need some for a special recipe you are veganizing, these are awesome. And as Serene says, you can learn to make them too. I like the steaming method for sausages made with wheat gluten and either beans or grains. There's a post on those at PPK (http://theppk.com/blog/2008/02/26/on-sausages-and-community/) and the new cookbook Vegan Brunch by Isa Chandra Moskowitz & Terry Romano has a bunch of versions with different additions and spices.

Here's a recipe from a class I took from Liz McMann http://www.foodsnobberyhobbery.blogspot.com/ Shared with Liz's permission. Tempeh Sausage Adapted from the New Moosewood Classics Cookbook This sausage is great to warm up for breakfast, to make into sandwiches for lunch, or to crumble into pasta or rice with dinner. I love having some on hand in the freezer! 16 oz tempeh (my favorite is the LightLife Garden Vegetable variety) 2 Tbsp. olive oil 1 Tbsp tamari, shoyu, or Bragg’s liquid aminos 1 Tbsp. maple syrup 1 Tbsp. molasses 1 tsp. dried thyme 2 tsp. dried sage ½ tsp. smoked paprika (or sub. regular paprika) ¼ tsp. celery seed 1 tsp. fennel seed 1 tsp. salt ¼ tsp. black pepper 1/8 tsp. allspice 2 Tbsp. wheat flour or tapioca starch Break the tempeh up into large chunks and steam over boiling water for about 10 minutes. Preheat the oven to 400 and either grease a baking sheet or line one with parchment paper. In a mixing bowl, combine all remaining ingredients, except for the wheat flour or tapioca starch. When tempeh is steamed, allow to cool enough so that you can handle it comfortably. Break tempeh up into very small pieces into the mixing bowl with the spices and liquids. Stir together until the spices are evenly distributed throughout the tempeh. Sprinkle the flour or tapioca starch over the tempeh mixture and stir to combine. Grab a small amount of the tempeh mixture and roll into 1 in diameter balls, then flatten the ball in your palm into a patty. Place the patties on the prepared baking sheet. Bake for 5 minutes, then flip with a spatula and bake another 5 minutes or until beginning to brown. Serve immediately or seal in an airtight container for freezing or refrigerating. To warm up, just heat in a lightly oiled skillet or toaster oven.

How did I miss that. I made sure they did not contain eggs and milk. Maybe I over read the ingredients. --- Im going to definitely try the Gimme lean sausage style and Field roast. Thanks for helping me out everyone.

I'm a long time vegetarian who has been working on transitioning to a vegan diet, and the morningstar farms sausages are really the last only remaining non-vegan food in my diet. Is there anything similar that is vegan, does Boca or Monringstar farms make a vegan version (maybe something available online)? I've ordered some vegan breakfast sausages from an online store, but they look pretty big, and not like something that can be microwaved, so I don't think they would work to replace the Morningstar ones.
