Anyone out there in Kickstart Land?
Posted Friday, February 4, 2011 at 4:32 PM

I was wondering if any of you are going to Superbowl Parties and if so, what are you planning to eat?

My sister is going to have meatballs on hoagie rolls, so I am going to make something vegan that is compatible with those. Hopefully the meatball eaters will be willing to take a spoonful of my pasta or whatever, and my little grandniece who wants to be a vegetarian will be very happy.

We went up the road to a firehouse in Maryland that is eating more vegan foods (based on the Engine 2 diet plan). We made them the Quickie Quesadillas and they flipped over them! Who knew?

I have a really embarassing tradition - the Super Bowl Super Salad Bowl. I make the biggest salad you've ever seen with everything you could imagine - beans, lettuce, spinach, beets, corn, croutons, walnuts, baked tofu, nutritional yeast (of course), peppers, carrots, slightly steamed broccoli, and anything else that wants to jump in the Super Salad Bowl.

And I drink one very cold beer.

Then I get bored.

We're going to the annual party at a friend's house. It's always potluck. We're bringing vegan chili queso with corn tortilla chips. Mixing hubby's "famous" veggie chili with the not-cheese sauce. It's super yummy, vegan, soy and wheat free.

One year we brought "wheat balls" - a bean patty recipe that uses bulgur. Mixed them up with some of hubby's homemade BBQ sauce. No one knew they weren't meatballs unless they asked us about them (we try to alert folks if we bring something that we know they have issues with, like letting our gluten-free friends know these had wheat in them).

If everyone else is eating subs, I'd bring veggie subs (I got these roasted vege subs from Wegmans - they were huge and delicious!)

Another suggestion -- I made the tofu spinach lasagne. Everyone (all the meat eaters loved it -- my son 12 year old son said "what this isn't cheese?")

Susan, you need to have someone teach you the rules of football and get you a team you care about. Then you won't get bored and maybe you'll drink more beer!! Smile

Or start/get into a football pool. The random grid style has no relationship to how much/little you know about football - you pick a square in a 10x10 grid and then after all the squares are filled (chosen by people) the numbers are randomly assigned (drawn from a hat) to the rows and columns. So, if you've got Green Bay "7" and Pittsburgh "4" then scores of 7-14, 27-34, etc would be "winning". Some pools have winners every time the score changes, others only 'count' the score at the quarters (1st qtr, half, 3rd qtr, final). We get in one where I work (which has a money 'pot' but that's not necessary) to keep things interesting when we don't have a team to cheer for - we cheer for the score! It was really helpful for several years when DS didn't understand football and would get bored at the party - but he knew how to find out the score and he'd keep track of "our" numbers. Now he understands football better and we still keep track of the score and our numbers.

When the Super Bowl comes, can baseball be far behind? Not a big fan of football, but I watch the Super Bowl every year. I'll be alone, with my feline roommates, and probably eating Spanish Rice from the freezer. Baked it too long so it turned out pretty dry. May add something to moisten it.

We are doing the standard chili and cornbread... someone else is bringing hummus and veggies & crackers.. another person is bringing whatever they decide..

KG's dad is coming.. he eats meat.. kg says oh we have to make something for dad... my response was. let's put this into propective for 6 hours the man can live without meat!! besides with the chili who would miss it? lots of meat eaters have bean chili.

If you've got a can of diced tomatoes, that would help - just mix it all in a medium saucepan until it's all warmed.

I live in Packer territory, so things are Superbowl crazy here!

Cynthia, I love your point about surviving 6 hours without meat! My BIL will not eat at our house because he says he needs meat at every meal. I think it is his (childish) way of getting even with me (I won't eat meat, he won't not eat meat). When he comes here for birthday parties, he always comes after lunch.

A few years ago we did a party. I served veg chili and a cuban (taco) dip. The dip had cheese, but it was vegetarian. I subbed tvp for ground beef. I get so many requests for the recipe. I always give them the tvp version, just to encourage people to try it.

I used to love love love football. Big Vikings fan. But gradually over the years I stopped watching and now I can't tolerate even being around it. Grown people spending hours and hours watching it. Priviledged athletes acting like idiots. Drives me nuts!! I just don't even go to SB parties now because I don't want to spoil everyone elses' fun. Seriously, I'm like Football's Scrooge. Confused

Anyway, I will be watching my DVR'd Masterpiece Theater Downton Abbey (no joke) I may tune in the SB to watch the Black Eyed Peas at halftime. And I plan to make a big big salad, just like Susan's.

By the way, I will be alone. Everyone I know will be watching the SB. Very Happy

I'm having the chili mac from the kickstart menu, but I also got salt & vinegar Popchips (vegan) and I'm going to make some guacamole to go with some tortillas. If I have the time I might make some vegan brownies too. Still a lot of food! Might have to hit the gym tomorrow Laughing

The chili queso (hubby's veggie chili mixed with the not-cheese sauce) was a BIG hit at the Super Bowl party - had several requests for the recipe before the evening was over! Very Happy

I live near Philly -- current football home of Michael Vick. I cannot stand that guy and I will not watch him, so I am glad the Eagles did not get into the SB this year.
