Crockpot beans

I know some of you said you cook your beans in a crockpot. What I want to know, do you presoak first and how do you cook them. thanks!

I don't soak them. I just put them in the crock with plenty of water and let them go. Don't have the exact amount of time, but several hours. I have done chick peas and beans both and pretty much put them in the pot in the morning and they are done by afternoon. Overnight would be okay too.

Hi, I was also wondering the cook time and added ingredients for the crockpot. Also, what are the best beans with regard to nutritional value - I am looking for low fat and high protein?

I don't use any seasonings, just water. I season whatever I use them in once they are cooked. If you do it overnight, I'd put it on low. If I do it during the day I put it on high and just check it after about 3-5 hours I believe. I read somewhere that Adzuki beans have low gas so that could be good for many. As far as nutritional value, I believe they are all pretty much relatively low fat and high in nutrition.

I've read in 2 different books recently that Kidney beans interfere with thyroid function. I love kidney beans, but have switched to Adzuki beans and other types for that reason. I cooked the Adzuki beans in the slow cooker for about 3 hours and they were "mush." I ended up putting them in the blender with some seasonings and making soup which was ok. At least they weren't wasted. Then on my second try cooking beans in a slow cooker, I cooked pinto beans about the same time. I didn't presoak and they were totally overcooked too - but edible. I cooked them on Medium setting and I could see they had a nice slow simmer. I guess I need to watch more carefully until I get the time down for my slow cooker (Proctor Silex - about 2 years old.) I don't add salt or seasonings until the end or until I put the beans into whatever recipe I might be using them for. I believe about an hour before the beans are done is when you can add salt and other seasonings, tomatoes etc. Otherwise the beans will never fully cook. I've gone from undercooked beans to overcooked beans, but I'll eventually get it right! LOL Have a great day! Dee

That's a great list of recipes. Thanks for sharing. I can't wait to try the Reubens, one of the things I miss from my meat eating days! My favorite Vegan restaurant in Orlando makes Reubens and they are awesome! Getting to have them at home will be even better. Thanks again.

Beans should be soaked overnight, nuts too. It makes them more digestible. The soaking water should be thrown off, and they should be cooked in fresh water. For pinto beans, I add onion, garlic, a chipotle or two in adobo (with some of the sauce), a bit of kombu, a shake of red pepper flakes, and then salt when they are tender. Cook in the crock pot all day or overnight. They are really good, even non-vegans want the recipe. The chipotle gives some of the richness and smokiness of bacon.

I have mixed beans in the crockpot right now. Veggie broth, onions, garlic, celery seed and smoked paprika. The house is smelling yummy, my omnivore husband is asking when they will be done!! I soak them overnight, rinse off the soaking water and cook them with fresh water and vegetable broth. Since they are mixed beans some cook up a little firmer, some a little softer, but the taste and texture is always good. I like them topped with fresh chopped onions! Yum!

We've got beans soaking right now. We either soak overnight or start them first thing in the morning (before breakfast). They soak for about 6 to 8 hours (type of bean can vary soaking time needed). Then hubby cooks them up in the pressure cooker - it takes a couple minutes to get up to pressure then about 2 minutes at pressure to fully cook them then a couple minutes to cool down enough to open the pressure cooker - half hour total time maybe. He cooks 1 to 2 lbs of beans at one time then packs them up, still hot, in glass jars and lets them cool to room temp on the counter. Then into the fridge and they sorta seal up and keep for up to about 4 to 5 days that way. We've always got at least one type of bean in the fridge ready to go, sometimes more. We do plan out a two week dinner menu - not specific days but what meals we want to have so we can stock the proper ingredients - so we can look and say "we need 3 meals' worth of black beans and 2 meals' worth of chickpeas in the next 10 days" and arrange appropriate bean soaking and cooking times. --Deb R
