So what is your favourite recipe that you would highly recommend? The catch is that is must be on the PCRM or one of the associated websites (NutritionMd.org; The Cancer Project, Food for Life, 21-day kickstart).

Mine is currently the Black Bean Burger. This recipe was also mailed out in June as a recipe of the week. For variety I have made it replacing the black beans with lentils and its equally as good although the flavour is a little milder.

I use these burger patties on sandwiches, as burger patties in a bun, to stuff wholegrain pita bread, and as a 'meat replacement' on the side of a plate with vegetables and mashed potatoes. Having some of these in the freezer to take out when I want has become a staple.

I have modified the recipe in one way - after making the patties it says to fry them in a little oil. I make the patties and place them on an oven tray and bake for 30 minutes. Turning at 15 minutes so each side browns a little. No change to taste and no need for oil. Very Happy

I had this Breakfast Scramble when I took the Cancer Project's Food for Life nutrition classes with the wonderful Katherine Lawrence. (You've probably seen her videos by now. She's awesome!)

NutritionMD's Brown Rice Salad is one I've made and enjoyed a lot. It's great to have alongside a salad for lunch.

I go back to NutritionMD's Hummus 2 over and over, though I leave out the red peppers. It's balance of flavors is perfect for me.

Have you guys checked out PCRM's recipe index? I just stumbled upon it. There are a ton of great ideas there! Some are repeats from The Cancer Project, but some are new ones I've never seen. Making me hungry! Haha.

I think my hands-down favorite recipe has to be PCRM's Spinach and Mushroom Frittata. I've made it over and over, and loved it every time. I usually make 4 servings out of it, and it's perfect for lunch with a salad or other side. I leave out the tomato and use more mushrooms... I'm an addict. Very Happy

Thanks for playing the game Molly Horn. When I posted yesterday I thought it would be interesting to see what everyone likes. I now have the added bonus of trying a new recommended recipe that I had missed. Specifically the Penne, Kale and Tomato pasta. That sounds great and I have fresh kale growing in the garden right now.

I will also look onto the Hummus 2 recipe for a change form the one I have been using.

We've modified most of the recipes a bunch and mixed and matched a lot of things but the one that is pretty much 'as written' and has become a staple in the house is the roasted red pepper hummus. Most of the other recipes have been "jumping off points" to try new things like the whole world of dark leafy greens (kale, chard, dandelion greens, bok choy, etc) - the stuff that we always just walked past on the way to the lettuce.

Yeah I like the mushroom frittata's too. And the hummus.
