Sick day options
Posted Thursday, September 9, 2010 at 10:40 AM
I have a chronic lung disease, and on sick days it is not possible for me to cook. Since becoming vegetarian a few months ago, I have handled this by keeping Amy's frozen foods available. Is that still a good option while on the kickstart program? Any other suggestions to help me stick with it on the days when breathing is difficult? Thanks!

Amy's non-dairy options are totally fine. Would you feel up to throwing a bunch of frozen berries, a banana, and a splash of almond/rice/soy milk into a blender?

Is your chronic lung disease CF? My half sister has CF. She is in the hospital (club-med) right now but doing well. When I am not feeling great I heat up a few non-fat veggie beans, throw them on a pita or tortilla, add salsa and eat. Add your favorite fruit for dessert.

Thanks. I don't have a blender, but Christmas is coming. No, I don't have CF. My problem started a few years ago. I was working in a pediatric ED, and the flu shots didn't work that year. Flu went right to my lungs. I was very sick, first with post viral respiratory syndrome, and then persistent severe asthma. After two and a half years, four different pulmonologists, and more medicine than I want to think about, I'm still very ill. I'm hoping that going vegan will counteract the weight gain from steroids and restricted activity, and maybe that will help.

I would also suggest making a pot of soup on your good days that you can freeze in smaller quantities. If you like vegetable soup, I posted an easy yummy recipe in the January Kickstart. If you can't find it, let me know I would be happy to send it to you.
