I have found quinoa and gluten free rice and they work well.
What about other meat substitutes? I can't eat soy, have GI
issues and same with gluten. I am going to get tired of

By "meat substitutes" are you're meaning proteins. Try lentils. If you're meaning "centerpiece or entree" (they way a steak takes up the center of the plate and veggies are sides), then aim for some of the heartier veggies - mushrooms, especially portabellas, add a 'meaty' texture.
