What's the deal with potatoes being okay? I was always told that they were high on the glycemic index. No?

Not everyone has diabetes/GI concerns. I eat LOTS and TONS of potatoes, and my sugar numbers continue to be, as they have been all my life, perfect.

I do have Type 2 diabetes and have to watch my carbs, but my rule is everything in moderation (except animal products which are now off the list completely). You can eat sweet potatoes/yams instead of the usual white potato.

I love potatoes in every way, shape and form and eat them guiltlessly...just being careful about portion size.

All we are saying is "Give Peas a Chance"

We will have a special webcast on the glycemic index - it will air on Monday, Jan 18. We talk about the benefits of sweet potatoes over white potatoes - more nutrition (and beta-carotene!) and helps with lasting energy rather than a spike and then a drop.

This is helpful for people with diabetes or people watching their blood sugar.

My wife's suger stays constant with potatoes as long as it isn't JUST potatoes and she has kept her daily fat under 20 grams.

I like to stuff them with leftover soup and cooked beans at a 1:1 ratio. Served as a side, with a plate of steamed veggies, it is a very satisfying, high-fiber meal with lots of phyto's and antioxydants.
