If you're sticking to lots of non-starchy veggies (things like kale, broccoli, etc.), fruits, beans/lentils, and whole grains, you'll be full long before you max out your calories. Make sure that you're using whole foods and not convenience foods as much as possible and minimize use of higher fat foods even if they are vegan (nuts, avocado, etc.) Skip any added fats (learn to cook with water or broth, not oil, for example)
The hardest part is slowing down and learning to recognize what comfortably full/satisfied feels like, not 'stuffed'. And, too, learning what 'hungry' feels like - as opposed to thirsty, bored, tired, needing comfort.
