What is your food today Sun Feb 6th?

hi,
I realize many of you have already responded to this in the other thread about superbowl.. but for the rest of you... here ya go!

I am coming out the other side of this sinus congestion, but still not 100%.. so honey is taking over cooking duties.

b-cereal.
l-sandwich/soup
d-whatever KG cooks..
s-oranges, green tea..

Finally soaked black beans overnight and cooked them myself instead of using canned beans. Could actually taste the delicious bean instead of all the salt. Divided the rest up in one-cup containers and put in freezer.

Also, made broccoli potato soup and cauliflower potato soup and after it cools, will freeze these in one-cup plastic containers.

Wow, not a lot of response today - everyone must be watching the Superbowl (not me).

L: Hummus & cuke on tortilla (2)
S: Baked chips and salsa
D: Steamed vege and Rice

Trying to cut down a little after all the eating on Saturday (it was vegan -- but a lot) The scale isn't budging and I'd like it to move down again. Plus vacation in FL this month -- it might be alittle difficult without my stove.

Also, I made the red pepper hummus without tahini. I left it out because of the fat content. It tastes pretty good without tahini. I dipped green pepper strips in it. I have extra made for the week.

@veganer.. wow that is great that you did the beans! so much better.. and cheaper too...

Tonights dinner turned out easy.. My honey shoveled and took care of the snow for both us and his parents.. so i wound up cooking..

i made novicks Spinach/Cannellini Power Lunch..

Basically boil water, dump in whole wheat pasta, 2 min before done i put in TWO (instead of the one called for) canns of drained & rinsed white beans. ..

drained beans & pasta, rinsed pot.. put beans & pasta back in the pot.. added almost a bag of fresh spinach.. tossed gently to wilt.. then put the top on to finish wilting.. while i prepared the dressing..

1/4 cup apple cider vinegar, 1/2 tsp sea salt (i used a lot less) 2 TB EVOO, 2 TB lemon juice, 2 TB vegenaise mayo,

it didn't seem to wilt enough, (probably because i forgot to break up the spinach, and i used a lot more than called for).. so i heated up the dressing in the micowave.. till hot not boiling...

then sprinkled between 1/2 - 3/4 cup nutrional yeast over pasta/spinach.. poured on hot liquid & stirred.. it wilted right away .. got a litte "cheesy" It was fantastic, just like that . ..

but i wanted to make it pretty..so i put some in each of two bowls and then cut up a tomato and split that between the bowls.. my honey also put those hot pepper rings on his..

both of us were very happy with dinner..filling and nutrious..

of course then we had dessert ONE cupcake.. i made the peanut butter cupcakes out of Vegan Cupcakes take Over the World.. they were so good we didn't even need frosting!! they could easily be counted as muffins.
