Nutritional Requirements?

Not sure if I am eating right. Vegan yes; but not really sure about anything else.

My goal is first to improve my food choices, nutrition for wellness (i'm not sick; but ageing-52), stop eating beef & chicken, and if i lost 15 lbs it would be a bonus worth jumping up and down about. Heck i might even do cartwheels again.

so i found that i like 1 & 1/2 cup kashi 7 grain flakes w/1 & 1/2 cup unsweetened soy milk & a medium banana for breakfast. I might do oatmeal on the weekend.

A couple of days ago i made black bean burgers, which were a bit soft. i used black bean, cooked spinach, garlic, cayanne pepper and lots of brown rice. they were good. Even other family members liked them.

here's my question.. i ate those for lunch and dinner till they were gone with watermelon for dessert. Is that ok? the beans held me great.. i was never hungry except when it was time to eat. is that a fattening dish?

Last night i made the couscous confetti salad. I was going to eat that for lunch and dinner till gone. it's yummy by the way.. But i decided to make the red pepper & carrot soup this am. So i have them both ready to go.. along with watermelon, pineapple and cukes cut up and ready to eat.

Is this meeting nutrional requirements? will i be hungry? can i do it this way -cook once eat a few times? not enough beans with the two i have made? should i mix in hummuas? is it too many carbs for weight loss? too much sugar with all the fruits?

ok so i am a little confused. I am trying to make this work for me. even before i would cook on sunday and monday at least part of the food i would be eating tues wed and thrus.

ps. i do take a multi, b-complex and cal-mag. Should i add fish oil?

I'll be as short and sweet as possible:
1. Yes, sounds like you found a low-fat way to make vegan burgers (didn't see any added fats to your ingredients list). Eat as much as you want. Watermelon? Great!

2. If you are eating a variety of beans, grains, fruits, and vegetables, then yes. You will get all of your nutrients. "Eat the Rainbow!" Only you know if you will be hungry. If you are hungry, then eat more of these wholesome foods.

3. The thinnest cultures on Earth eat upwards of 80 percent of their calories from carbs. Carbs causing weight gain is a terrible myth. Overly-processed grain products like pastries, hot dog buns, corn syrup, etc. aren't good carbs - but that's not what we are talking about. Don't worry about sugar from whole fruit. Trust me when I say Americans aren't fat because we eat too many apples.

4. There's really no need for an omega-3 supplement. If you eat a variety of plant-foods, you will get all the omega-3 you need and in the ideal ratio. It's not that we eat too few omega-3s. It's that we eat so many of the other fats that the omega-3s we do eat can not perform their important benefits. But the answer isn't add more fat. It should be pull down all of those other fats. Which is what we are all doing on the Kickstart!

Thank you Susan. It looks like with the couscous & soup there are no beans.. guess i should freeze something and then make the lentil soup? or can i just skip beans for a day? or just eat some of my red pepper hummuas.. do i need much..? 1/2 cup? 1 cup?

yes this is one of the biggest reasons i will stay with the program and refer it to others! the support is outstanding and better than i could have ever expected. a big part of it is Susan.

Susan it definitely shows that you love your job! You are insightful and helpful and really hands on. Going vegan isn't easy for everyone, we all have come here for different reasons so we all have our individual needs, roadblocks, learning, and hurdles and it is so awesome that there is someone like yourself here to help each of us with our questions/needs.
