RE: What substitutes for chicken broth?

Here's what I make if I feel icky and want soup:
Vegetable broth (Imagine has a No-Chicken flavor)
frozen stir fry or other mixed veggies
plain cooked pasta or rice
fresh garlic and ginger
bring broth to a boil, add frozen veggies, garilic and ginger, and stir occasionally until heated through.
Add pasta or rice and remove from heat.
Season to taste, but not too much salt because miso is next.
Stir a spoon full of miso paste into each serving to dissolve.
Sometimes I will also put in diced jalapeno--high in vitamin C. Ginger and garilic are both warming and supposedly boost immunity with natural antibiotic properties. Anyway, they taste good!
