so I've been cheating a little this week

I had some cheese still in the fridge & being the daughter of 2 Depression babies, I do not throw out edible food. But I'm going to not buy any at te store tomorrow. Hold my hand, please! Cheese is my major addiction. And I've tried to give it up before, without success. It's the salty, tangy taste. And the texture. But mostly the tanginess. So please help while I fight my addiction.

This isn't going to help today, but I highly recommend the book Breaking the Food Seduction by Neal Barnard. He talks extensively about why cheese is soooo terribly addictive. Would it help to think about dirty socks when you smell cheese? That's what I think of. Not because I miss it, but because it really does smell like gym socks. How about the incredible amount of fat, saturated fat, and sodium in cheese? Oy.

We are here to support you!!! Stay strong and remember that cheese is an addictive substance. Casein, the protein in cheese, is one of the most cancer-promoting proteins in nature. Cow's milk is extremely high in IGF-1, or Insulin-like Growth Factor-1, a hormone that promotes the growth of disease in humans and encourages the development of Type-1 diabetes in children. It is not meant for human consumption. A wonderful book that outlines this in detail is The China Study. It should be required reading for vegans!  You can do this. We're behind you 100%.

I totally know how awful it is for me. I have no idea why I still eat it. Giving up meat was no trouble whatsoever - read Diet For A New America & gave it up immediately. But not cheese. sigh.

Try thinking about what motivates you to give up other products and use that same technique for cheese. I have found it helpful to promise myself that I can have cheese in X number of days if I still want it then. And then I think about why I am choosing not to eat cheese (health reasons, the horrific conditions of factory farm dairies in caring for cows and killing babies for veal, etc.). When it comes to the day I promised myself I could eat cheese if I want, I feel like I've waited this long, I could wait a few more days... Hope that helps! Amy

Here's a recipe for "Cheesy sauce" that might help sometimes. It's great on broccoli and baked potatoes or with whole wheat pasta or add some jalapenos for nacho sauce with Guiltless Gourmet baked corn chips and refried beans. Cheesy Sauce 1/4 cup raw almonds or raw cashews (cashews are softer, so may work better in some blenders.) 2 cups water 1/2 - 1 tsp. salt (to taste) 1/4 cup nutritional yeast (flakes) 1 tsp onion powder 1/2 tsp garlic powder 3 Tbsp cornstarch or arrowroot powder 1 tsp - 1 Tbsp. lemon juice to taste. (More makes it a sharper cheese flavor, less a milder flavor) 1/3 cup roasted or fresh red bell pepper (optional for color) Option: blend 1 tsp canned jalapeƱos for a great nacho-style cheese. 1. Blend all ingredients until smooth. 2. Pour into a saucepan and bring to a boil while stirring constantly. 3. It will thicken to nacho cheese consistency. Serve hot. While this does contain nuts, there are only 2 grams of fat per 1/4 C. serving. Enjoy!

I am not cheating with cheese or dairy, as I have not been eating it since March 21 kickstart. But I have not been following the food plan to a tee. I hope to get back on board next week. For today, the ambrosia sure looked good, so I may make that for dessert tonight. Good luck to all the newbie and returning peeps.

For some, however, thinking of all the "factory farms" and such won't help - we get most of our cheeses from local organic type farms that use none of the chemical additives in their cows (growth hormones and such). The cheese is made from raw milk (cow or goat, depending on type). So saying "just think about the factory farm" wouldn't really help me to want to stay away from cheese (or other dairy). --Deb

Becky, this is something I've also struggled with during the past two kickstarts and I completely went off the rails inbetween. I now weigh another 5lbs more than I did when I started in January! It is obviously triggering my indigestion and IBS, but not in the immediate attack sort of way - rather, if I eat it frequently, I suffer chronically. I didn't even know what was causing my GERD before the 1st kickstart and I've had it since I was a teenager, but it's been getting worse. Even with all this evidence I've still been behaving like a cheese-addict! I've decided this time I am not allowing myself pizza days, just like I wouldn't allow myself 'drug days'. I know it's a slippery slope to relapse and I have to be very careful. Molly suggested reading China Study, and I'm about 3/4 of the way through it. It really does help to know just how dangerous dairy really is.

BlondRenee I'm not following it to a tee either - many of the meals we already love are (or are readily adaptable) to vegan recipes. Hubby's veggie chili, soups, rice, beans, and veggie combos, homemade whole wheat pasta with diced tomatoes and fresh herbs on top, black bean burritos, etc. are all 'standard fare' here. We did, however, love the new recipe for roasted pepper and carrot soup! --Deb

I know that you wrote this over a week ago but I just wanted to say that you are making a change and that in itself is so great! When I decided to do this eons ago, I did not have the 21-day kickstart (I am doing this for the help with the oils!) and I had to do a lot of research. In my house, we had a lot of animal products. I immediately cut out meat but did finish up the cheese and milk. I did not replace anything that was an animal product but I did not throw it out because that is just as wasteful as anything else we can do. I am doing the same now with the oils. I am sparingly using up what we have left in the house and then will not replace them. Do not beat yourself up about it but definitely do not replace the cheese. At first, things will not taste the same. I was fully addicted to cheese because it made everything taste so good...or so I thought Give it a month, at the most, and food will taste so wonderful. You will taste the little things instead of just cheese. You can do it!!!!!

One of the things I learned either at Weimar or McDougall(possibly in an advance study weekend) is that cheese has "opiate" like qualities to it. No wonder it makes us smile! I am now watching the McDougall Advanced Study Weekend video tapes from just this past weekend in Santa Rosa. What woke me up is that the nutritionist who was reviewing the latest nutrition journals told us that the food industry adds ALUMINUM!!!! to its processed cheeses to improve consistency and cuttability. Anyone care to increase the risk of Alzheimers? If so, buy your long term care insurance now and keep consuming aluminized cheeses. Sure I have cheated. I went to a Thai Restaurant and had Sweet and Sour Mock Duck. I ate and I ate past the point of satiety. But it was not animal products. If you go Thai, you may be able to get this mock duck(seitan) which is just like meat only it's wheat. Delicious.
