Vegan vs whole foods

I'm having a hard time with the fake or synthetic foods. I have been a whole food (clean) eater for over year and thought I would try vegan. I see a lot of recipes with white flour, processed soy products, refined white sugar and fake cheese, etc. ( not necessarily on this web site, but in cookbooks or recipe websites) I was just wondering why this is.... I guess I want a whole food, plant based, vegan diet. Am I asking too much? HELP!

I used some sugar in the beginning, getting my wife over to vegan. Many people need transition foods before they will even TRY it. My personal opinion is that they would have an easier time if they jumped in all at once. I make Shelley's Brownies without the listed sugar, and the flour is all whole grain. It still isn't "health food" but it is 35% the calories of a "real" brownie, zero added fat, and it takes the edge off of the 15th to the 19th of every month. (Thank G-d)

No. You are not asking too much. I like to refer to some of those foods as "transition foods." The ideal is absolutely to eat as whole foods a diet as possible.
