Warm weather is here! (mostly)

So, spring has sprung (for the most part, I guess, it's still pretty chilly here in New England). What are your favorite "bounce into spring" dishes? What's light and fresh and refreshing on your table these days? For us, this week is all about hearty soups still - Sunday was red lentil soup, Monday was chowder, today (Tuesday) is chili. That's what happens when it keeps raining on and off and the high temps don't make it to 60. --Deb R

Edamame salad, anything raw, light sandwiches, and avoiding heavy, cloying sauces and stews. I've gained weight and am trying hard to lose it. So far, no success, but I am determined!

Since we've still had winter weather here in Seatle we've been making soups as well. last night was a creamy hungarian bean soup. I posted the recipe here: http://twochubbyvegans.wordpress.com/

Tonight I'm making the copycat recipe for Olive Garden's Minestrone soup minus the pasta and no parmesan cheese on top (for tomorrows lunch and probably dinner too.) This week I made a lentil soup recipe that used dill instead of thyme and wow - the flavor was a nice surprise (had other spices in it too)! Tonight I sauted green bell peppers and onions with some cumin, chili powder and smoky paprika then served the veggies over quinoa with some black beans thrown in. Just a quick dinner using the leftover quinoa and black beans. Topped it off with Jack's Salsa from Costco - love that stuff. Can really taste the lemon or lime in it. I enjoy reading what others are making as it gives me ideas. Still new at this, but really loving this way of eating. I've now lost 21 lbs! I have alot to lose so I'm assuming thats why its coming off fast right now. I can honestly say I'm full all day long! Thats one thing I've never, ever experienced while losing weight. Thats why I know I'll stick to this - especially since I love all the fresh, whole foods anyway. Can't wait for the next KickStart! Coming here often and reading all your posts is very inspiring and keeping me on track. Thanks so much!!!

For me it's gotta be the sweet potato falafel wrap with salsa. I'm sure you could make this at home if you wanted to.

Speaking of salsa, we were having nachos the other night but our jar of salsa was empty (we like the Newman's Own - tasty, less salty than others though it does have some, so we just go easy with it, and Newman's Own donates a goodly portion of the profits to charity). We do however have a cool new gadget from Pampered Chef - a manual food processor. Works like a salad spinner (the pump action lid) but it spins a blade assembly. It was great for doing just a small batch of salsa - put the onion in, pulsed a bit, added chunks of bell pepper, more pulses, then dumped that in a bowl with spices and a can of diced no sodium added tomatoes and mixed a bit. My SIL said it was the best salsa she's had in a long time. --Deb R

Its autumn here and cool tonight. I have a fire going. Looking forward to trying some of those kickstart recipes that I just didn't feel like cooking and eating in the summer heat. There is also a newish award winning food company producing some vegan meals in their range and selling at the local supermarket. I am excited about it as it gives me an option on those odd days when I really dont have time to cook and have not planned ahead. I have emailed them to let them know I tried their food and will continue to be a customer and appreciate having vegan options. Its part of my plan for vegans to take over the world. If I let a company know I support them when they produce healthy vegan foods/meals, hopefully they will continue to do so and maybe expand the range. Then more people will start trying the vegan way of life because they see it as being easier and more mainstream compared to the past when very little was available and vegans were thought of as kind of alternative. At least thats the plan.
