What do you do if you want to start in a country that does not have all of these wonderful ingredients? I was thinking of getting 2 or 3 dishes and just eating them to adnauseum. Reading the recipes makes me hungry but the reality is that I don't have the resources to create such wonderful dishes. Eating only greens keeps me hungry. HELP!!!

RE: Business Meetin Eating Etiquette

Either eat what you can and leave the rest or take something of your own.

They often have subs, chips & cookie.. take the meat & cheese off the sub, scrape as much mayo off as possible.. or skip it entirely. YOu can eat the chips usually.

Or take a walk for lunch. Usually business lunches are an hour. So find a place you can eat close. Chinese places seem to be almost everywhere. steamed veggies & rice w/tofu.

Or you take an apple/orange/salad of your own. Say you are on a diet... if they even ask. Why should they? Don't offer, don't make excuses. Just eat what you want to eat.

if someone does ask.. you don't have to say anything except "I felt like a salad today." You can have the chips with it.. as long as they are plain.. no sour cream & cheese. lol.

If worse comes to worse and for whatever reason you are uncomfortable. You can CHOOSE to eat whatever you want, including whatever they are offering. Hey I have had a piece of cheese pizza at a party. It didn't ruin everything. But that happened because I went to the party without a plan.
I tried Sun-dried Tomato Red Lentil Loaf today and it was delicious :D
Hana-

I made the Lentil Loaf last night and it was good. I made it with sun-dried tomatoes but will try it with olives as she suggests as an alternative next time. My son thought the tomatoes made it too sweet. I'm looking forward to the leftovers.

Business-Meeting Eating Etiquette

So, I will be with a client tomorrow. We have a conference meeting with about eight people in the room, including my boss. The client usually orders sandwich trays with your normal fare, turkey, chick salad, ham and roast beef. I do not think it proper to ask for a special order (in fact, they usually order beforehand and do not ask for orders) and I do not want to make a big deal out of my diet.

What to do???

Had a yummy dish last week - cut a nice eggplant into rounds about 1/8-1/4 inch thick and lay them on a baking sheet or large casserole dish. Top each with a teaspoonful or so of crushed tomato and chopped fresh basil (and other herbs as desired, maybe a pinch of salt as well). If desired, add a sprinkle of non-dairy cheese. Bake until eggplant is tender. YUM!

21 days and with success!

21 days with success! Today is my 21st day on the vegan challenge. I started on April 28th prior to listening to each day of the 2013 Food Revolution Summit. Between, the information from the Summit, as well as websites, like this one, I am informed and equipped to continue on a vegan lifestyle. I found several free videos regarding agriculture on hulu and youtube. This made my transition from vegetarian to vegan easier than anticipated. With the level of awareness. I'm confident I will never intake another animal product for the rest of my life. I have not had any cravings for cheese which was my weakness prior. Thank you for giving access to everyone for the 21 day challenge. I found it and very helpful.
