Daredevil Comedian Steve-O Joins 21-Day Vegan Kickstart

Steve-O may be a professional risk-taker, but he doesn’t take chances when it comes to his diet. The newest 21-Day Vegan Kickstart coach has nutrition tips, inspiration, and low-fat plant-based recipes to help you Kickstart your health in 2012.

“I have benefited in every area of my life from being vegan … emotionally, physically, mentally,” says Steve-O, best known for his role in the Jackass TV show and films. “It makes me feel good in every sense.”

The Kickstart began on Monday, but it’s not too late to sign up for daily messages, a 21-day meal plan, motivational nutrition webcasts, social support in the community forum, an interactive vegan restaurant guide, and tips from the veteran team of celebrity coaches.

Steve-O’s Kickstart message will be going out to registered Kickstarters later this month. In the meantime, try one of his favorite risk-free recipes. Cheese is the No. 1 source of saturated (“bad”) fat in the American diet. Cheddar cheese is 70 percent fat (by calories), and high in sodium. This delicious spread has the look and taste of spreadable cheese but none of the risks.

Cheezy Garbanzo Spread

Makes 8 1/4-cup servings

1 15-ounce can garbanzo beans
1/2 cup roasted red peppers
3 tablespoons tahini
3 tablespoons lemon juice

Drain garbanzo beans, reserving the liquid, and place them in a food processor or blender with red peppers, tahini, and lemon juice. Process until very smooth. If using a blender, you will have to stop it occasionally and push everything down into the blades with a rubber spatula. The mixture should be quite thick, but if it really seems too thick to blend, add a tablespoon or two of the reserved bean liquid.
