Karen Kipp, RD
Karen Kipp, RD, has been a vegetarian since age 13 after reading Upton Sinclair’s book The Jungle. She went into dietetics and became a registered dietitian nutritionist, later giving up dairy after learning about the bovine growth hormone. She works in a small hospital seeing inpatients and outpatients and has taught a variety of classes, including vegetarian cooking classes. She is an endurance athlete and found a plant-based diet was the best diet for performance and recovery--even for 100-mile runs or bike trips across the United States. She has a master's in exercise science and a master's in holistic medicine. Karen is passionate about teaching others that the vegan diet is best for human health, animal life, and the survival of our planet.
