October is Breast Cancer Awareness Month, a time to focus on prevention and education. In this class, part of the Let's Beat Breast Cancer Curriculum from the Physicians Committee for Responsible Medicine (PCRM), we'll explore the impact of diet on breast cancer risk. You'll learn how dietary fat can weaken the immune system and increase hormone production, leading to higher rates of hormone-related cancers like breast cancer.

 

We’ll discuss the role of fiber in the body, including how it helps eliminate toxins, waste hormones, excess cholesterol, and other harmful substances, which is crucial for supporting the immune system. We’ll also examine the consequences of a low-fiber diet and why a low-fat, high-fiber, whole foods plant-based diet is key to both prevention and protection.

 

During this 2-hour class, you’ll gain practical skills in the kitchen by learning to make three easy and delicious recipes that are low in fat and high in fiber. While all three recipes will be demonstrated, you’ll have the opportunity to follow along with one of them during the class. Participants will receive literature, handouts, and copies of all three recipes demonstrated.

 

The recipes that will be demonstrated are:

  • Homestyle Squash and Pinto Beans
  • Broccoli or Cauliflower with Sesame Salt
  • Mixed Berry Banana Smoothie
