Esther Suarez has been devoted to living a whole-food vegan lifestyle since 2002. Having healed herself of anemia by eating only plant-based foods, she went on to earn certificates in whole-food, plant-based nutrition from the T. Colin Campbell Center for Nutrition Studies, Drs. Rick and Karen Dina - The Science of Raw Food Nutrition, and The Physicians Committee for Responsible Medicine. With this wealth of plant-based knowledge, and her Master’s in Human Development, Esther expanded her teaching practice. Her focus in nutrition classes and food demos is on the benefits of eating “whole-food plant-based, “ teaching at adult schools, colleges, non-profits, libraries, and senior centers. As a certified PCRM Food for Life Instructor her commitment is to offer classes primarily to low-income people of color that have experienced the most disproportionate challenges of food inequity and health disparity.
