Kathy has always been health-conscious, but like many Americans, believed that the SAD way of eating wasn't so bad as long as a variety of foods were included in the diet. Eating the rainbow included fruits and vegetables, but also included yellow egg yolks, red meat, and orange cheese. That all changed when in 2019, she was turned away from donating blood because her blood pressure was too high. After researching natural ways to lower blood pressure, Kathy came across Dr. Gregor's website nutritionfacts.org and the beginnings of changing her diet one bite at a time started. Kathy came to realize that whole-food plant based nutrition was the best way to heal and nourish her body so that it could get back to good health. Her eating habits changed and she saw an improvement in her blood pressure, significantly less joint pain and the elimination of GERD that she didn't even know she was experiencing! She is a firm believer in what cardiologist Alejandro Junger stated in the film Hungry For Change "The problem is we are not eating real food anymore. We are eating food-like products." As a retired middle school teacher of 33 years, Kathy is excited to bring her passion for teaching to the arena of promoting good health through whole-food plant-based eating. Adding to her expertise by earning her Master's in Education, becoming a Food For Life Instructor will allow her to do just that! Kathy is currently offering in-person classes to empower people to take charge of their health bite by bite because food is life. When she's not teaching a class, she enjoys hanging out with her family, including 4 grandchildren, doing yoga, spending time in her garden, traveling with her husband, reading and hiking.
