Nancy is a licensed registered nurse and she received her Bachelor of Science in nursing from Lewis University. She earned her specialty as a Certified Diabetes Care and Education Specialist from the National Certification Board of Diabetes Educators. She is the founder of Latino Instruction in Diabetes to Empower and Reduce risks (LIDERr) Wellness Foundation, a non-profit educational organization that provides education regarding diabetes and how a plant-based, whole foods, and low-fat lifestyle can prevent, control, or reverse diabetes and heart disease. She has developed and implemented community-based programs for underserved, high risk, Spanish and English-speaking families; she has also presented at seminars, conferences, and health fairs throughout metro Chicago. Nancy also received the Hispanic Heritage Award and was nominated for Nursing Excellence for her community service. Her mission is to educate, equip, and empower underserved families, especially with Spanish-language and financial barriers, with the knowledge to prevent and reverse chronic diseases like diabetes, through low-fat, plant-food diets and lifestyle modifications.
