Veronica Ibarra
Food for Life Instructor
Veronica is passionate about plant-based nutrition and wants to give individuals the tools they need to prevent and reverse chronic diseases. She has a degree in Health Communications from California State University Channel Islands, a Plant-Based Professional Certification of Completion from Rouxbe Online Culinary School, is a nutrition educator and licensed Food for Life Instructor with the Physicians Committee for Responsible Medicine. In 2021, she was diagnosed with Hashimoto’s disease and hypothyroidism. She was told it was a disease she would have to live with for the rest of her life. Determined to rid herself of this disease, Veronica decided to adopt a Whole Food Plant-Based diet. Within less than a year, she was able to fully reverse her Hashimoto’s disease and hypothyroidism with no medications, just food as medicine. Veronica hopes to inspire others to take their health back, one bite at a time.
