The U.S. Centers for Disease Control and Prevention reports an uptick in recent years in the number of adults who say they are on a special diet.

With more people than ever following certain eating patterns for health reasons, environmental or humane concerns, allergies, or cultural or religious traditions, it could be a conundrum to decide what to serve family and friends this holiday season.

Enter Universal Meals, a program with a collection of recipes developed by Chef Dustin Harder of the Physicians Committee for Responsible Medicine, the Culinary Institute of America, Spork Foods, Inc., and DC Vegan Catering. Universal Meals will allow you to accommodate all of your guests. It was designed to appeal to virtually everyone, regardless of their dietary requirements.

The recipes are also delicious, health promoting, and 100% plant based.

From traditional dishes such as Classic Mashed Potatoes and Baked Macaroni and Cheese, to special items like Roasted Squash and Cranberry Brown Rice Risotto and Vegetable Lasagna With Sunflower Ricotta, Universal Meals recipes are free of the top nine allergens and sure to please everyone at your holiday table.

Universal Meals all exclude:
  • Animal-derived ingredients (meat, eggs, fish, shellfish, and milk)
  • Gluten-containing grains (wheat, barley, rye, triticale, and contaminated grains)
  • Peanuts, tree nuts, soy, and sesame
  • Alcohol
