Ingredients

- 3 c (312 g) sprouted mung beans
- 1 tomato, chopped
- 1 red onion, finely diced
- 1/2 bunch cilantro, chopped
- 1 green chili, seeded and minced
- 3 tbsp (45 mL) fresh lemon juice
- 1 tsp (5 mL) dried mint (optional)
- 1/2 tsp (2.5 mL) ground cumin
- 1/8 tsp (0.6 mL) ground red pepper
- 1/4 tsp (1.2 mL) ground black pepper
- 1/4 tsp (1.2 mL) iodized salt
Directions

Rinse the chilled mung beans under cold running water, drain well.

In a large bowl, toss the mung beans with all the remaining ingredients. Adjust salt as needed.
